The bad news is, there is no good kouign amann in Seattle or anywhere in the western US (so far, by our calculations). The fantastic news is that there IS stunningly delicious kouign amann in Calgary! I first balked at La Boulangerie because I had bookmarked two other bakeries to try. But I'm so glad we came here. Walking up to the storefront, I took in the quaint outdoor tables and the people enjoying a coffee and brunch. The first language I heard outside was French, which only added to the idea that we were in the right place. It wasn't busy when we walked to the counter at an off hour during the week, but I could see this place being slammed on a nice weekend. Do yourself a favor and take the time to look at all of the treats in the case. I had no idea which one to pick, but I'm so happy I went with the pear marzipan croissant - something I wouldn't easily be able to find at home. The savory breakfast crepes were tasty but could have been enhanced by a sauce on the side - the ingredients inside were a little dry. The Nutella latte was AH-MAZE-ING. Sweet, hazlenutty, but not overpowering. I immediately looked up a recipe for a future attempt to recreate it at home. The standout by far was the kouign amann, which comes in more than one flavor (insert mind blown emoji here). My husband chose a vanilla-filled one. Holy lamination. The layers, the glaze, the crunch. The vanilla cream filling was somehow both fluffy and delicately flavored yet sturdy enough to survive a day in the car. If I could fly back to Calgary every weekend just to buy a single kouign amann from this place, I would. Service was wonderful and we were surprised that that instead of calling our number, the staff walked each component of our order out to us. Highly recommend. When I travel into Calgary, this is always a necessary visit for me. Their scones are also delicious. Nothing tastes, greasy or stale. I've always tasted everything fresh. My husband especially loves their pretzels. They also offer hot beverages and espresso drinks. I love their Americana Misto. This is definitely my favorite bakery in Calgary.

Better beans, more expertise making a perfect Americano in the traditional style, with proper crema and strength - third time visiting Sucre and the americanos are very weak, diluted and hollow. Also could promote the French theme with French cafe music and staff taking a little more care and flare with presentation and service. Go to Cafe Triste or Amato for the coffee, Sucre for the sweets. (There are mini courses on excellence in coffee preparation and service on Master Class, the baristas here need to learn their craft and take pride in it.)
