I came very close to downgrading to 4 stars. The service is great, and the food absolutely fantastic. I got fairly non exotic pastries, a raspberry turnover (not as good as the other items), chocolate croissant, cinnamon roll, plus a monte crisco breakfast sandwich. And the place is nicer looking inside than what you expected from the exterior. But $28 for my 4 items seemed extreme. The many coffee varieties seemed reasonable, and there were no prices on baked goods. So I overbought. I will know better next time. read more

Still as delicious as ever. For something savory we recommend the Montecristo (ham, cheese, mustard and jam on croissant). My favorite item is the sticky roll which isn't sticky at all but a wonderful crispness. Note there aren't visible prices and it runs around $7 each. But so worth it! read more

The only reason that I visited Chama was to stop by for pastries from Wilder Bakeshop. I patiently waited three nights until they were open at 0700 on Saturday (the owner, Jazzmyn, is only open on the weekends in shoulder season). I take my baked goods veeery seriously. So, my checked luggage included a Rubbermaid container. The staff was very friendly and the interior is very calm and modern. I've only had a cinnamon roll so far (pre-Edward Sargent Wildlife Area trail run!), but it was delicious. I highly recommend Wilder Bakeshop. read more

The receptionist at our hotel in Chama recommended that we pick up coffee and pastries at Wilder to start our day before riding the train. What a great recommendation! The pecan sticky bun was divine and the green Chile cheese quiche was a far better lunch than what we were served on the train. Most importantly, the coffee was the best we found anywhere in New Mexico. This place is a gem and compares most favorably with the high-end bakeries found in much larger cities like San Francisco where we live. This was a great find in Chama that we had to go back the next day. First day got a chocolate croissant, heirloom tomato/Mozzarella/Basil croissant and a London fog. Both pastries were delicious. I had followed this shop on Instagram and today took a day trip from Albuquerque and stopped here for coffee and pastries. These European pastries are that and more. Loved the individual quiche in flaky pastry and the other twists and tarts we had. What a sweet spot! The drive was superb and the people here were professional and friendly. Make the trip! Highly recommend this bakery if you are anywhere in the area during opening hours (Fri/Sat/Sun as of Summer 2022). I spend summers in SW CO about 75 minutes from here, and I literally plan hiking trips in the South San Juans and shopping trips to Santa Fe to be able to stop here on the way. The baked goods are beautiful and delicious, and the shop seems a labor of love by the owner. read more

This was a nice little find in Chama, NM... our hotel (Chama Trail Inn) receptionist recommended it and we are sure glad she did! The latte and dark chocolate mocha were amazing..I wish I would of got a picture of the pasties I picked up they were so good! We got a couple sticky buns, green chile cheddar croissants, a fruit tart and some sort of other little tart that was just delicious! If you are anywhere close to Chama, make a stop at Wilder!! The pastries all looked amazing. We had a cinnamon roll and a sticky bun, and I can honestly say that's the best sticky bun I've ever had (and I work at a bakery!). It was a melt in your mouth experience. We also had lattes, both of which were made with homemade caramel and vanilla syrups. Delicious! They also had quiches, but they had jalapeños in them, so our midwestern taste buds passed accordingly - wimps! The owner was super friendly and we were fortunate to chat with her for a bit. Every time I come to Chama, I have to stop here. I will stay an extra night to make sure my trip includes a visit. Literally the best bakery for 100 miles. So many new things to try. I had high expectations on my first visit to Wilder, as I had been told it was great by many friends I trust. On my first visit, my girlfriend and I were the only customers. A woman was standing outside smoking when we arrived and she seemed bothered she had to go inside and wait on us. We each bought a coffee and pastry, and they were good. The server was unfriendly and distant, considering we were the only people in the cafe. On my second visit, a different woman helped us and the atmosphere was a lot better. I believe she was the owner. I almost told her about my last experience, perhaps I will... She was friendly and genuine. I was visiting Chama and someone told me there was a new bakery in town, just south of the Subway. He said it was "pretty good." I had the feeling he was one of those understated types so I went the next morning. Oh my. I will never pass near Chama again without stopping there. I had a bacon and green chile quiche which was amazing, with a light, flaky, buttery crust. I don't even like eggs and I loved this sooooooo much! It completely redefined quiche for me. I personally wouldn't expect to find a bakery of this quality in such a small place. It's as good as, if not better than, the best bakeries in Albuquerque which is much, much larger. Go there now.
