I stopped into Buckwild Saloon for lunch and ordered the Shrooms & Swiss burger with onion rings. I was thoroughly impressed! The burger appeared to be made from fresh, hand-pressed beef, cooked perfectly to my preference of well-done, yet still juicy and flavorful. It was clearly prepared on a flat-top griddle, with a beautiful Maillard reaction crust that gave it that distinctive, delicious seared flavor. The patty appeared to have been properly smashed and weighted for excellent contact with the cooking surface. The mushrooms were nicely browned rather than soggy, and the garlic aioli complemented them beautifully. One detail I particularly appreciated was the meat-to-bun ratio. The patty matched the bun perfectly, so every bite had just the right balance of beef, toppings, and bread. No bites of just bun or just meat! The onion rings were equally impressive. They tasted freshly prepared, with a golden, crispy coating and just enough bite left in the onions to give them a wonderful texture. The accompanying spicy dipping sauce was an excellent match. To top it all off, the Diet Coke came with free refills, and my waitress was friendly, attentive, and made sure I was well taken care of. It's refreshing to find a place that gets the little details right. Everything from the preparation and presentation to the flavor and service exceeded my expectations. An easy five stars! It was very hard to communicate with the server due to the noise. The actual menu is a lot smaller then what is shown on their website. Especially fish options. I had grouper tenders which were small and mostly breading. Not worth it. Fries were excellent. Tartar sauce appeared to be pure mayo, no sign of relish or lemon at all. Ketchup, mustard, and salt were the only condiments on the table, not sure if anything else was available, like cider vinegar or even pepper. It's a pub, you would think all that stuff to be automatic. Second night (9 pm Sunday) I tried to go elsewhere because of my previous night's experience, but not many other options. Most of Alma was already closed. Tonight there was no music playing, so I was able to have a conversation. I had the olive burger with steak fries, my son had boneless wings with Thai sauce and waffle fries. Everything was very good, and a good value for the money. I guess I need a third night to be a tie-breaker.

When I asked him that why we had not seen a server from the time we ordered until then, he said "What? Because your drink was empty or something?" At that point, I did not really want to argue over cold food and a waste of time, so we paid for our food and left. It was pretty disappointing to wait 40-45 minutes for cold food. It felt like our server went on break and no one covered for her, or noticed that some tables were going without service. I hope this is not what we should expect from Hamlin Pub.
