I love steak! So mine will be my stand-by. Cast iron steak with onions.
1: You should have your steak seasoned to your liking, and resting outside the fridge. (Mine was seasoned with pink sea salt, crushed black pepper, New Mexico seasoning mix [ it probably includes, oregano, onion, and garlic powder, chili spice]
2: Get your pan hot, cast iron is best but any good pan will do. How do you know it's hot enough? Drop a few drops of water, and if it evaporates in an addictive shhhhs sound, you are ready. (Now stop doing it, are you done? No, really, stop) Drop that baby in the pan! Ok that's disturbing, drop your meat....never mind, place the steak in the pan.
3: Cut your onions to your liking. I do mine Julienne. Here is a link if you want to do it the same way:

4: You turn the steak when it gets nice and brown, usually 3-4 minutes or so, depends on your range. One's turned, you can add the onions and season them with the same mix you used in the steak. Now depending on how you like you steak, will gauge how long you leave it, 4 minutes for me depending on the thickness.
5: Remove the steak, and let it rest, you finish the onions in the pan, making sure you move your onions to pick up all those delicious juices. I add a bit of aminos, and balsamic vinegar to pick up the steak pieces that might want to escape ( get those suckers) add a bit of butter or olive oil to finish the onions. Place on top of steak!
6: And this is important, eat it nice and slow, enjoying every bite. You can weep a bit, for your vegan friends if you like, but that is totally optional
