They smoke the old fashion way of slow and long with only wood smoke. Service was very courteous and fast. According to my wife it is the best bbq she has ever eaten and she is not really bbq lover. I was going to walk back and ask him about the lack of pico but there was a line and I didn't want to cut in line or make a scene. First, there were no smiles from either staff working in the truck. If anything, they appeared annoyed. Second, if they were running out, just tell their customers and either charge less or offer another side. We've ordered from 3 trucks in the area and 2 out of the 3 were a similar experience (no smiles, appears annoyed). For a food truck, even though it's lobster, it's overpriced and overrated.
