Homemade, hot, fresh, crispy, and salted to perfection. Catfish? Fried perfectly. Not soft but not "hard" crunchy either. Paired with the homemade tartar is the bee's knees. Wings? Crispy, only downside, lots of mango, no, habanero. We stayed and chatted with Ms. Charlotte a while after and got some history on her husband, Dave, and the restaurant. Small, dark, and unapologetically retro, it feels like a sub shop that missed the memo on modern restaurant design and decided it didn't care. Honestly, respect. Now, the subs. Galligaskin's cuts their own meat and cheese in house and bakes their rolls fresh daily, which is the kind of thing that sounds like marketing until you take a bite and realize it actually matters. The roast beef and cheese, loaded with toppings, is a proper sandwich. The house-made Galli Oil and pickled pepper finish that goes on every sub is the secret weapon - not spicy, just deeply flavorful, the thing that makes each bite a little better than the last. The Gusto Burger was a solid burger overall. It had good flavor and a nice balance of the toppings without anything overpowering the beef. The Sweet Heat Burger was the standout for me. I liked the combination of sweet and spicy, and the heat wasn't overwhelming. It gave the burger a little more flavor and personality compared to a traditional burger. We also tried the tots, and while they were crispy, they were overly salty for my taste. The amount of salt made it difficult to really enjoy the tots, so I'd probably skip them next time. Between the two burgers, I'd personally go with the Sweet Heat. If you like a burger with a little sweet heat and don't want anything too spicy, that's the one I'd recommend trying.

So yesterday (10/3/2012) Keller had it's first pop-up food truck event. I was very happy to catch wind of it, for I'm usually late to the party when it comes to events. In attendance were Gastro Bomber and So-Cal Tacos (http://www.yelp.com/biz/so-cal-tacos-fort-worth). My plan was to order something from each truck, one as a way to show support, and two, well because I'm a glutton and wanted to try both. I looked over both menus and came to a decision. From GB it was going to be the Chicken and Waffle Sandwich. I've been wanting C&Ws forever, from anywhere, and tonight was finally my night to try this item. The first thing to point out is it was not really a "sandwich" unless you want to stretch it and call it an open-faced sandwich. Second, it was not a full-sized waffle, but rather something rectangular. It consisted of three pieces of boneless chicken and a drizzle of maple syrup. Cost, $8. It was very good. The chicken was tender and the waffle delicious. What I noticed, and confirmed, is that there is corn meal in the waffle batter. I was told this is the Southern twist they like to add to there food. It was like Belgian cornbread. Yummy! Now I will add my wife's comment, which seem to be true of all food trucks, is that the cost to quantity ratio seems to be a little high. Three large tenders on essentially half a waffle for 8 bucks seems a bit much. Now I came up with a new take on the cost and that is this; One, your getting to try something new and somewhat unique. Two, and here's the kicker, your bottom line cost is perhaps a bit less than if you sat down in a restaurant. If tips are expected at food trucks, I did not see any obvious vessel for the cash to go in. You can bring your own drinks, and thus your bottom line for a unique dining experience really is not bad. I for one am glad this came together. I was excited when I learned that Keller might be getting it's own food truck park, and was disappointed when I learned the plans were not approved. Somehow I think Keller's loss will be Roanoke's gain (Actually Corina T., aka the "shark lady", who I met at this event said that). From this point forward I will keep track of food trucks coming to Keller, and there are definitely a few more items on GB's menu I would like to try (Irish Nachos, Shepherd's Pie Croquettes, Fish and Chips, Picanha Sandwich). The burger was great, and the brisket-blend patty really did have a lot of flavor! It was decently sized and more than adequate to fill her up.
