I…read moregenuinely feel like a cheesemaker now, and have applied much of the ongoing learning I've gleaned from these courses to numerous homemade cheeses. I know enough to tackle many cheeses - from chevre to cheddar and everything in in between. However, I was cursed by mozzarella - for the life of me, I could not make mozzarella that didn't turn out like hard, tasteless rubber - trying to follow a recipe off the internet - I was convinced it was an impossible cheese. After Kate's hands-on class, not only did I make an incredibly tasty mozzarella - she also showed us how to turn it into a special Burrata - which tasted amazing and looked beautiful. I learned how to make a great mozzarella in the class and regained my confidence in tackling this cheese - thanks to Kate's careful instruction and sharing several tips and tricks to this tricky little cheese.

I am signed up for my 3rd class and I am so looking forward to it. She also shows us her farm and goats during her classes. Kate has an excitement about what she teaches and loves her dairy goat farm. I highly recommend these classes for folks from beginners to seasoned cheese artisans. There's always so much to learn! You can tell they really care about what they're building here. The wine selection is excellent, and their flights are a steal at just $14. They also offer meads, mulled cider, and an entirely new food menu that pairs perfectly with the drinks. There's clearly a lot of thought going into the experience now. We also heard a new deck area is coming soon, plus plans for a paella night--which honestly sounds amazing and gives us even more reason to come back. If you haven't been to Snowy Peaks recently, it's absolutely worth another visit. They're doing great things and it's becoming a must-stop spot in Estes Park.

The staff was patient and helpful with recommendations, and it really did get me in the holiday spirit. I walked out with multiple bags, an empty wallet and a full heart.
