I…read moregenuinely feel like a cheesemaker now, and have applied much of the ongoing learning I've gleaned from these courses to numerous homemade cheeses. I know enough to tackle many cheeses - from chevre to cheddar and everything in in between. However, I was cursed by mozzarella - for the life of me, I could not make mozzarella that didn't turn out like hard, tasteless rubber - trying to follow a recipe off the internet - I was convinced it was an impossible cheese. After Kate's hands-on class, not only did I make an incredibly tasty mozzarella - she also showed us how to turn it into a special Burrata - which tasted amazing and looked beautiful. I learned how to make a great mozzarella in the class and regained my confidence in tackling this cheese - thanks to Kate's careful instruction and sharing several tips and tricks to this tricky little cheese.

I am signed up for my 3rd class and I am so looking forward to it. She also shows us her farm and goats during her classes. Kate has an excitement about what she teaches and loves her dairy goat farm. I highly recommend these classes for folks from beginners to seasoned cheese artisans. There's always so much to learn! The staff is outstanding--everyone we interacted with was genuinely friendly and went out of their way to make sure we had the best experience. You can tell they really care about what they're building here. The wine selection is excellent, and their flights are a steal at just $14. They also offer meads, mulled cider, and an entirely new food menu that pairs perfectly with the drinks. There's clearly a lot of thought going into the experience now. We also heard a new deck area is coming soon, plus plans for a paella night--which honestly sounds amazing and gives us even more reason to come back. If you haven't been to Snowy Peaks recently, it's absolutely worth another visit. They're doing great things and it's becoming a must-stop spot in Estes Park.

As far as the flight, we both liked the Lagerado the best and each enjoyed another pint of that after finishing the flight. I also liked the Kernel Mexican lager, although we both agreed it had a bit of a weird taste. The 90 Shilling is always a safe bet. Further confirmation neither of us like pilsners, that one wasn't great, and the Old Doods stout wasn't our jam either. It was a lovely day, so we sat outdoors relatively early on a Sunday. Plenty of shady seating for us. Counter service was very friendly too. We'll definitely be back next time we're in Ft. Collins.

I have had kids toss a ball back and forth over my head - it was only a matter of time before I got hit, I asked them to move, the parents were oblivious. I wouldn't complain if I was at a park but I am at a BREWERY. Kids are screaming and running around, and that is not relaxing.

The class scheduled for 7pm started a little late as the prep staff were a bit behind schedule with the mis en place . The chef instructor was very knowledgeable and extremely engaging and probably the most enjoyable part of the class for my friend and I. He quickly dove in to get the class on track for the 8pm "break time" of 15 minutes. This is when you are supposed to shop and spend more money in the store. The class itself is designed for complete beginners and there is little opportunity for hands on experience as you work in teams of 3-4 people and most of the prep work was done before class. Eat before you go to class as there are no nibbles and dinner isn't ready until after 9. Our Parisian dinner, eaten standing as there is no seating, might have been improved with a glass of wine (local restrictions permitting). It would have been nice to have the menu displayed on the big screen monitor for the class with a timeline and at least one copy of the recipes per "cooking" team or on the monitor for reference during the class. The chef did send us the recipes by email afterward which is appreciated.
