I have to buy twice as much as I want because I eat half on my way home. I have a similar problem with the ricotta. Before it makes it to the mannicotti or lasagna it was intended for it will be devoured with crackers. Nevermind the fantastic caprese salads during the summer with the mozzarella. I highly recommend the cheese-making classes as well. I'd pay just to hear Luca's commentary on life, much less to learn how to make cheese from him! Even after studying food in Italy, I've never come across anyone so passionate about dairy. The shop sells cheese (and they let you have samples), wine, and imported foods, but it also a full deli that serves sandwiches, salads, prepared food, and more. My mom is vegan but was able to make a very good vegan sandwich (hummus and lots of veggies), while I really really really really loved their French Picnic sandwich (French ham, brie, apples, and honey mustard on baguette). It was the best brie (and soooo much brie) that I've ever had and just a perfect sandwich. There was a little wait to order - it's a popular spot - but once our sandwiches were in a brown paper sack in our hands, we drove over to Walden Pond and enjoyed them there. What could be a more perfect lunch on a first visit to Concord than a great sandwich from the Concord Cheese Shop enjoyed looking out at Walden Pond?! I'd return for that sandwich - and next time I'm tasting cheeses, too!
