It's hard to believe, but I had never actually tried venison until I moved to St Hilary a couple of years ago. In fact, I'd tried buffalo and wild bore before I got round to eating this noble beast.... And perhaps that's the problem. I think I admire deer too much to have considered eating venison before. It was only when someone explained how healthy venison is in comparison to other red meats, and how the deer population needs culling to protect the woodlands and maintaining a healthy natural balance in the countryside, that I decided to give it a try. Needless to say, it was delicious.
Venison from the Vale produce Prime Park venison which is lean and highly nutritious. It comes in a variety of family size cuts and can be bought directly from the Park or from farmers markets including; Cowbridge, Penarth and Mumbles. It's a seasonal meat, available between the months of September to April. (I used to buy fantastic venison sausages from the butchers in Cowbridge...
