Locals don't eat in the historical center because tourists are loud locusts. Add to that, because of volume the quality and value isn't the same.
Off the beaten path by a smidge, Cisternino homies said this is the fish spot and by the by, the meat spot is just next door, a few steps away.
The tartars of tuna and salmon were subtly seasoned and very fresh. They say you don't overwhelm excellent fish but a little inventiveness with some citrus and herb would've been welcome.
The sword fish main was shareable sized, similarly nuanced in flavour as the crudos. The white wine was dry and excellent with hints of grapefruit. The mixed green salad is worth mention- Puglia is known for superlative olive oil- the mandarin style-sliced zucchini and cucumbers gifted the greens with the perfect crunch.
