Any person who decides to open a bbq place in Texas must be pretty bold. When we got out of the car, I could smell the smoke. It was promising but I've been fooled before. This was good barbecue. The bark on the brisket was consistent and peppery but not overwhelming. The rib meat didn't quite fall off the bone, but close to it. The turkey had a good Smokey flavor. I also got the charro beans and the jalapeño creamed corn. The corn was good but it was fabulous the next day! I don't think this is the best barbecue in Texas but it was pretty good barbecue and better than some of the supposedly famous places in other parts of the state. To finish out the 2023 Texas Monthly New and Improved BBQ Joints list, I headed to the The Rio Grande Valley to explore the last three. Today I visited Vargas BBQ in Edinburg. I was the first customer to arrive and had the pleasure of talking to Nidia Vargas, the Boss Lady, and learning how the establishment developed over time and how they made it onto the Texas Monthly list. She was very personable and the dining area was comfortable. I ordered the Texas Trinity and was not disappointed. The brisket rub is Pitmaster Ram Vargas' special blend. It made a great addition to the perfectly smoked, tender brisket. The sausage reminded me of the Black's Lockhart sausage that I grew up with. It did not resemble store bought sausage either in flavor or texture. I would definitely order this meat again. The ribs had a savory sweet glaze. They were smoked well, meaty and tender. For the sides I had Nidia Vargas' signature creamy green spaghetti, charro beans, potato salad, and Mexican rice. The green spaghetti is pasta bathed in pureed jalapeños, poblanos, and cilantro. It started off with a mild heat which built up as I continued to eat it. It was a great complement to the delicious meats. The charro beans were probably some of the best beans I have had. The potato salad brought back pleasant memories of my mother-in-law's potato salad that, in my opinion, is second to none. The Mexican rice was well seasoned as well. I've been to Varga's BBQ twice this month. Let me tell you, don't listen to the other reviews, this place is legit BBQ. The brisket was well smoked. Nice bark. Seasoned perfectly. Moist and fatty. Delicious. I'll put it up with any of the BBQ places in the RGV. Smoking Moon, Rudy's, Smoking Oak, Teddy's etc. better than some of those places. The house sausage is very good. Nice snap. Nice consistency and good flavor. I'm not going to say no to a piece. The pork spare ribs are outstanding!! Tender. Smoky. Peppery. Unctuous. A must try. And my personal favorite, mollejas. I grew up eating mollejas as a kid. When you grow up rancho, you tend to grow up eating lots of other cuts most people don't. What some may call delicacies lol. Mollejas, tripas and barbacoa mixta (if you know what that is made up, you know what I mean). These mollejas are grilled and I'm guessing then fried to give that crispy exterior and soft, fluffy interior. They go great with their fresh green salsa. Another must try if you're into such things. Sweet tea is solid! Sides. Are ok. The star is the charro beans. Get them with a side of rice and you won't be disappointed. Unless you like to order your rice and beans mixed in the same cup already. That they will not do. So suck it up! Lol. So next time you're in Edinburg and are in the mood for some of the best RGV Tex-Mex BBQ come to Varga's. Trust me, you will enjoy it. P.S. It's best enjoyed at the location. It is smallish. P.S.S. Visiting RGV from North Texas. Brisket is great, sliced thick and juicy. Ribs are on point...great bark, not falling of the bone pull away easily. Tried the mollejas and the fried and smoked chicharron...all on point. Can we talk about the sides?!?! Creamy Mac and cheese, spicy Creamy green spaghetti, BEST charro beans...get the Tejano Bowl...fideo, beans and brisket...omg goodness!! Last but not least, the service. Yesterday, 6/22/2024, I ordered the 956 plate, the amount of food is acceptable for around $25 I paid. The fajita taste was acceptable but it was room temperature, the sausage was good, and the chicken was alright. I wanted brisket but they were out, unfortunately. The service and ambience, however, are below average. The ambience is not inviting, the staff are cold and robotic. The business may be short staffed or something but even if that was the case they should at least have the social skills of a smile and a nice genuine word with their customers. Ii went to get their lunch special for the day. Since we are just getting over a pandemic, they only have curbside. The first time went to the Place, no one ever camevout. I went around the block and stop, finally female camevout to take my order. It was the worst customer service i had gotten, apparently the female was the owner"s significant other. This person should not be dealibg with the public. Getting back to the food, it was dry,and when i got my food, they said the food already had sauce...i think that was just B.S. The food tasted awful and was not worth the money i paid forvit. I would not recommend this place, there are better type of BBQ places in the area. The female needs to knowvhowvto handle situations. Ordered the birria Tacos and they were super greasy. I know birria tacos are usually somewhat greasy but the tortillas were basically falling apart. Brisket was dry and side were plain.
