My only critique is this - When working with vegan cheese - especially shredded, let it sit at room temperature before popping it in the oven. By doing this, you avoid the 'matchstick' look on the pizza. What happens is that the vegan cheese going from cold to hot is too extreme so it doesn't melt, or spread out - it essentially cooks / burns in place. Having worked with vegan cheese companies over the years, there is a misconception that it is bad to leave the vegan cheese outside on the countertop - not really, it's not cheese.
