Every dish tasted fresh, flavorful, and clearly made with quality ingredients. Service was fabulous! Started with their house-made guacamole & pico de gallo, which were both super fresh and the perfect way to kick things off. I also tried the elote, which was packed with flavor, and the fish taco, which was light, fresh, and absolutely delicious. The King Taco was another standout, and I really loved the queso birria taco; so rich, flavorful, and exactly what you want from a great birria taco. And you can't leave without trying their horchata, which was the perfect refreshing drink to go with all the food. I also had the opportunity to try their Baja fish taco which was another stand out for me! The fish was light, the Baja sauce was so flavorful and delish! What makes this spot even more unique is that their locations are actually inside QuickStop gas station market, which makes it such an unexpected gem. Their first location started near the King of Prussia area, and they now have a few locations in the area; including this one in Collegeville. Just goes to show that sometimes the best food can come from the most unexpected places. If you see El Gordo Bros while you're stopping at QuickStop... trust me, it's worth it.

Once again it did not disappoint! The queso fundido is spectacular! Most people associate queso with a sort of creamy cheese sauce, but authentic queso fundido is chihuahua cheese served on a sizzling plate that is soft, stretchy and chewy (much like mozzarella with a hint of salt). You'll can also order it with poblano peppers, shrimp or chorizo. Served with chips or soft warm tortillas (which I recommend). You'll be thinking of this appetizer for days.
