Stopping at HEB every time I'm in town is a must for a few groceries I can take home with me. Also true Texas bbq is one of my favs. It was a late dinner almost before closing time and lost good things were out. So I settled for the fatty brisket and the chicken leg. It wasn't busy so the food was out very quick. The brisket was fatty but I trimmed it and enjoyed. Still succulent and juicy. The chicken was a lil rougher maybe hanging around heat lamps most of the day. But it wasn't bad. The potato salad almost had no flavor, but I forget and keep ordering it. Now that you have the computer thing the lady behind the counter does nothing. I had to get someone's attention in the back to get my cup for tea. Then I get the text that my order was ready...... I wait and wait and finally the counter girl comes back from her stroll and phone calls and asks. "What do you need?" It was a dine in order but we decided to get lids for the little paper cups that everything was served in and take it home. This was the first time I have seen a meat plate served in cups. I have eaten here a couple times, and if you want really good down home, Texas barbecue, this place is it, they have such a good selection of not only BBQ meats, but also the sides. Today I had the beef brisket and the barbecue sausage, with collard greens and coleslaw. The brisket had that nice crispy outer edge and a nice smoke ring, and the flavor was delicious. It's hard not to love barbecue, but really good barbecue is the best, the smoked sausage was just as delicious and flavorful. I like the side choices they have like I said I had to collard greens And the coleslaw which both were great, and the other sides they have like mashed potatoes, mac & cheese, cornbread, and many other sides to choose from. THEY GOT THE WRONG PERSON!! I stand up for what's right on PERIODT! I am so upset about this order. I ordered delivery and I didn't see the option to order plain cornbread with my order. I called and they said the option should be there.. It isn't there ...So I spoke with a manager Perla who said she will add the cornbread to my order. I stated the only way I can eat my bbq is with bread so please ensure its there. After I placed the order I called back to ensure that cornbread is with the order. I'm giving 5 stars strictly on the food. The chopped bbq sandwiches are so good. Never any clumps of fat on them (so glad, because I can't deal with that). We also eat the potato salad every time and we ask for extra pickles. We get dessert to go for later because we are plenty full from the meal. We eat there quite often and even meet friends and family there for a relaxed and casual atmosphere and visit through out the meal and after. Ohhhh.... And you can grocery shop at H-E-B right after. So, let's address the Longhorn Steer in the room: True Texas Barbecue is a barbecue chain restaurant. Furthermore, it's a barbecue chain restaurant operated by and within a grocery store. Granted, HEB is a pretty good grocery store, but seriously, "supermarket chain barbecue joint" is not a phrase that fills one with confidence. At all. Never been happier to be wrong. I decided to try the place out following a recent article in Texas Monthly calling True Texas Barbecue the best barbecue chain in Texas. Although the article was about TTB as a whole, the Midland location and it's pitmaster(s) were referenced specifically and it was the Midland spot' s food that was taste tested, and when no less a barbecue authority than Texas Monthly says "try this barbecue," then you try this barbecue. I ordered a two meat plate with sliced lean brisket (because Texas, that's why!) and sausage. To say I was surprised at the bark, tenderness and smoky flavor of the brisket would be understating the quality of this brisket. By a LOT. This stands as the best brisket I've ever eaten that did not come from East of Abilene. The pitmaster knows what's up. The sausage was tasty bit I found the casing a little tough, though honestly I prefer too much bite in the casing over not enough. The Texas Barbecue sauce available in a pu ofmp on a counter, is a slightly sweet, semi spicy super savory concoction that complimented my food nicely. (Note: it reminds me a bit of Stubbs Original sauce. That's a good thing.) For sides I got the mac and cheese ad the cole slaw. Both were quite delicious, with the slaw being somewhat less sugary or mayo laden than many varieties you find in the wild, while the mac and cheese was fantasyic. I don't know if it was a blend of cheeses, jyst some white American cheese or some variety of "pasteurized processed cheese food", nor do I know if it was made on site or shipped in from some mac and cheese facility in the Gulf, and God help me, I don't care. This was great. So, although this may not be the personal at playground of some world renowned "Pit Boss," this is an absolute recommendation for 'Cue. Funny thing, later that same day I saw another article from Texas Monthly about another barbecue joint in Midland. I'll be checking that out soon, so keep your eye on my Yelp for details later. read more
