Where to begin? I can safely say this was one of the more memorable food experiences of my still young "foodie" life! Don't come here expecting traditional food prepared well. It's outside the box (relative to the rest of Northern NV), in a way that's so refreshing and inventive. This was truly a splurge, but in my eyes, absolutely worth it. I had high hopes just from reading the reviews, and thankfully, was not let down!
We waffled between the two main tasting menus... the 4 course Prix Fixe at $85 or the full blown 10 course Chef's tasting menu at $145. Opted for the 10 course, since we've been planning this visit for a long time, and may not get back again for a long time. Here's some of the highlights (that's a bit unfair though, since almost everything was a "highlight!").
Snow and Ice- this was shaved foie gras accented by sweet sauces, sour tastes, some cold some room temperature, and when you mixed it together, was truly a party in my mouth of a multitude of flavors
Bread course- Oh. My. Gah. Three types... one was like a french bread, one was some type of butter laced loaf, and also pumpernickel. The "butter bread" and pumpernickel were INSANE. Seriously, could have eaten that all night and left with a smile on my face.
Clay Cinders- there was a mushroom cream base with trout, mini brioche sticks and smoked (and fried?) juniper bush. It came under a puff of smoke as they opened the bowl in front of us. You could really really taste the smoke- it was strong, but it just worked. Really well. So different, yet so good.
A Taste of the Sea- my wife's favorite dish which had several types of seafood using a citrus marinade, partly tasting of ceviche.
Sierra Granite- the head chef and owner came out with a slab of ultra hot granite from the Tahoe basin, and scorch-cooked a langostine, putting it atop a bet of sauce and crunchy rice. This was served along clams in a sweet/savory sauce. Again, no idea how this was conceived but it was so freakin' good. The flavors all contrasted so nicely together.
Huckelberry snow (dessert #1)- talk about an explosion of tastes and textures on one plate. Some type of fir sorbet, sage ice cream, crispy dough strips, huckleberry sauce, huckleberry snow. There was dozens of taste combinations you could create on the plate, and each bite was unique and delicious.
Inspirations from Moon Dune Beach (dessert #3)- this plate was full of molecular gastronomy. It was created to replicate the scene from a Tahoe beach. The sand was a light sweet powder, the "water" was a white chocolate sauce, there was chocolate via rocks and stocks, and an ice cold granite boulders.
Mignardises- Five types of mini cookies after three consecutive dessert courses (sure, why not?!?). My favorite was a passion fruit gel, which was so tart, sweet and mushy in the absolute best of ways.
Whew- I'm stuffed! There were other courses as well which all were good, but those were the best of the best. The whole meal took almost 3 hours and was a really wonderful experience. Service was ok, but the main star of the show was the food. Not sure when, but we WILL be back. Keep it up Trokay! read more
