Like the public market sign you see at Pike Place Market or at Pybus, this is very similar, so I was intrigued. We had to check it out. We stopped in on a Sunday and were pleasantly surprised by what we found. Just like the market spaces at Pike Place and Pybus in Wenatchee, this is a public market space for local vendors around the area, selling crafts and goods, gifts and refreshments. It's not a very large market, but what they offer here are local gems. We walked around the entire market and there was always something that made us smile from the quirky offerings to the free samples from the food vendors. It was pretty quiet on a Sunday morning, so I assume it picks up around lunch time. It was nice to check out, and would do so again when in the area. There's a private parking lot right outside the entrance and bathrooms inside.

I'm bright enough to know that their waffle fries are highly processed, but I like the natural aesthetic the packaging goes for. Did you know waffle fries are created by quarter-turning the potato before each pass over the corrugated blade of a mandoline and deep-frying? This increases the surface area relative to the volume, which exposes a larger area to the cooking process and allows more water vapor to escape, resulting in a product that is crisper, and perhaps tastier as more of it is subject to browning and flavor producing effects. Potato skin can be seen on the edges of Lamb Weston's version of the fries, which may or may not play into the earthy potato flavor. These waffle fries were absolutely delicious. I prepared them in my air fryer to achieve a satisfyingly crispy texture. I didn't add any seasoning, but I found the amount of salt on them to be adequate.
