I've eaten at alot of spanish restaurants in NM, Arizona, Texas even. One day my brother stopped at a roadside YELLOW food site. In Tome', between Belen and Los Lunas. He got down to see the menu, the owner gave him a tamale to sample. He brought the plate to the car and we peeled the husk back. And this perfectly proportion, beautifully cooked, large tamale was quickly devoured by both of us. The red chile was shredded to perfection, the taste was a return trip back to my childhood. My grandmother, whose recipe I thought was lost to time, was recaptured in the two bites I took.So we both got out of the car and bought $100.00 worth of green and red tamales. Worth every darn penny! This food is handed down recipes and they are the bomb, sorry Eighties reference. But if you want delicious authentic spanish flavor. Take my word for it, get a sample, and be convinced by your own taste buds. As for I and my brother, next week we try the Asado and Barbados! Viva, my stomach. read more
