Thin Blue Smokery catered our wedding in March 2023, which was held at a venue in Hill Country, Texas. They were so incredibly easy to work with and the food was outstanding. Dustin and April just keep giving and giving and doing what they do BEST, serving the BEST ribs, sausage, turkey, bbq, and all the fixins that go with it. These folks should be listed in Texas Monthly as the BEST of the BEST in Texas! A special bonus (with this Coviod-19 mess) is that they deliver! Words are not adequate to explain the EXCELLENCE and attention to detail that these folks take in not only providing Quality food but (over the top) customer service! We just catered a birthday party with Thin Blue. In a word, "AMAZING"! We ordered the St. Louis ribs and they were excellent. The guests also raved about the street corn and cornbread. I had never been a big fan of brisket (I know that's a big faux pas as a Texan), but I was always hoping that I could try brisket that would change my mind. Thin Blue Smokery hands down gets the blue ribbon for the most delicious brisket I have ever eaten. Seriously, just thinking about the juiciness and flavor of their lean brisket cuts makes my mouth water as I type this. I tried Thin Blue Smokery for the first time several months ago at our neighborhood Food Truck Friday and I now look forward to having it each first Friday ever since. My teenager loves their nachos and had the chance to indulge in those this past weekend at Chiggerfest, which is what prompted me to write this review. I had been meaning to do it a while back but hearing my teen go on and on about how darn good those nachos were reminded me to get this review in. My husband and I married on September 16, 2017. We tried many caterers, but fell in love with Thin Blue Smokery at first bite. During our taste test, they made us feel so special, not like we were just another client. Our wedding went without a hitch. The appetizers were ready to serve as soon as our ceremony was complete and the meals were served on time. The portions were generously sized, without the need for seconds, although seconds were available. Dustin and his team came prepared and served nothing but quality. From the quality of the meat, sides and appetizers to the extraordinary quality of service. Professional would be an understatement. The BBQ Coordinator/Pit Boss' wife was elegantly dressed, poised and spoken. She made certain my husband and I ate, serving our plates so we did not have to get in line and made sure all of our guest were taken care of beyond all measures. Our wedding took place in December, 2017, in Bee Cave, TX. With the majority of our family living out of state, we hoped to share all of the things we love so much about Texas, including Texas barbeque. We spent a considerable amount of time trying to find the perfect barbeque for our big day. After receiving a dozen different quotes, we had become quite disheartened, and feared we wouldn't find the perfect balance of flavor, services, and affordability. Then we discovered The Thin Blue Smokery (TBS), and we looked no further. We met with Dustin and April on several occasions leading up to our wedding, and they went above and beyond to provide us with dietary options and wedding meal samples. Dustin and April are an absolute joy to work with, and they truly spend the time to get to know you and what you envision for your wedding day. Not only does TBS take care in sourcing only the best ingredients, they also include fine dining services at no additional cost (unlike other barbeque caterers who only provide picnicware). Dustin and April take affordability into account, and really worked to meet our budget, without sacrificing on flavor or service. On our day, the TBS team made everything perfect, and treated our family like their own. Our guests were thrilled with the appetizers, meal and service.
