There's cheeses, rice, meat... all mixed together and then fried until the outside is crispy. Top it with the aioli and it's a ball of heaven. I wish they were a little smaller though so 1) I could more easily share some and 2) stick them in the toaster oven when I get them to go. They're super filling and can easily be a meal, but part of me thinks they're supposed to be snack-food, if that makes any sense. I also tried the little potato balls, but they're not as good as the rice balls. Also sampled the yuca fries, and considering yuca isn't normally my thing and they were delicious, I have to give this place a thumbs up. I'll just live in denial of the calorie count... I can usually finish two sushi rolls easily but these rolls were so big I happily ended up with leftovers. The Oysi Roll was filled with cream cheese, shrimp, and cucumber and topped with salmon. The Spicy salmon roll had cream cheese and cucumber inside and was finished with large, generous heaps of spicy salmon. The portion of cream cheese felt balanced in the Oysi Roll but was a bit much in the spicy salmon, which also wasn't very spicy. That said, I loved how vibrant and fresh the scallions were on the spicy salmon and the fish in both rolls tasted fresh. There are two small tables outside the food truck, but this is definitely more of a to go spot. I'd recommend ordering ahead by text since there's usually a wait. I'll definitely be back to try more rolls!

They separate their menu with different areas of the world. I ordered quesabirria tacos which is said to manage "La Cruda" (a hangover). That, I did not have but I will say is probably one of the most tastiest birria tacos I have had in a long time. We also ordered Colombian empanadas and salchipapas. They are typical Colombian street food dishes. They were excellent. We called in our order than picked it up where they were parked. It was easy, convenient, & friendly. Everything was perfection. So glad I was able to try them and I hope they come visit again soon!
