We had a decent experience. The staff was really friendly and we were able to be seated right away. Our food came out fast and was hot. I ordered eggs, pancakes and potatoes, all were really good. My hubs ordered the Fiji Apple French toast and didn't like it at all. His eggs were also too hard to eat.

Every trip to Steamboat for me has to include a stop at The Paramount, and you can tell by my photos from over the years. My favorite sandwich, possibly in the world, is the Prime Rib. Although my favorite move is to split that and a Crab BLT with a friend. They have a tasty Bloody Mary (option to get it spicy) and a great happy hour. Simply one of the best sandwich shops I've ever been to.

The prices are high because of the location. Drink pricing is odd, the latter, coffee and milk are all $5 each? The dish portions are big but the taste is just average.

I'm on the fence with this spot. It's what they serve. I almost need a shower after eating one of their creation. Everything was wet. I was asked how I want my eggs. There shouldn't be no choice but scrambled. I probably chose the worst way to cook the eggs. Over medium. I was annoyed in the end cos every bite I took either a portion of the food would get in my hair, my face or my lap. What's the point? I also have a major aversion to sweet food unless it's a dessert. This has some jam. If you know me you know that would be a hard no. I was busy fending off food trying to attach to my entire person that I honestly was overwhelmed! But then again-its me mostly I guess. It's almost 5 Stars on yelp at a 150 total reviews! It's CLEARLY ME NOT THEM. The inside is really cute. It's at the base of the Steamboat Ski Resort. Yes, we stopped on the way down. They're busy. I think I ordered the wrong item. Next time I'm staying away from the Egg BLT. No way in hell this is close to any BLT's I've had in my 9 lives. Well when I get over my PTSD from my fight with this BLT ill stop by again. Ski season is about to end. By no means I'm getting off the encounter with this sandwich unscathed. I probably used three of their napkins and Adam D's too. Every bite I was losing the battle. I had to wipe imaginary blood born out of my fight with this terrible, terrible sandwich. ( my opinion. My experience)

    A Paramount "Biscuit" Disaster

Read all the glowing reviews so walked over for biscuits & gravy to-go. UNREAL when we got it back to the condo - dried up cold "muffin" with cold globby tasteless gravy. So hard couldn't cut, much less chew. Fell apart into a big mess once forced to put a knife & fork to it. Should be ashamed to charge $12, or really any $ for pure slop. Was advertised on menu, too, as "Biscuits & Gravy," but in reality was only 1 (not that we wanted more anyway). Coffee grinds in coffee, too. A true breakfast bust

We ordered about 10 different toppers for the table, so it was pretty good odds to find a couple that weren't winners, but I have to be honest. The ambience is so cute, very swanky, but anything in Colorado still feels casual because everyone shows up in flannels and T-shirts. We had a 5 o'clock reservation and were sat right on time, and the service was really great. I started with a Pisco sour, one of my favorite drinks and really uncommon to find in this part of the world. It was delicious. I could've drank five of them. We shared a bunch of tapas for the table, starting with the patatas bravas, octopus, ceviche, duck wings, yuca frita, croquetas, gyozas, and shishito peppers. The clear winner was the ceviche - not your typical Peruvian style, made with salmon and a thicker aji amarillo sauce. It was absolutely amazing and served with these yummy plantain chips that paired so well with it. Those were also a big standout. The texture was perfect both outside and inside. I liked the octopus too, and the patatas bravas were good but felt they could have been a little more crispy on the outside and had the sauce more well-distributed. The wings really were not memorable, overly breaded and thickly sauced. The yuca was the biggest letdown of the night, usually one of my favorite dishes, but these tasted like they came frozen from a bag and did not even finish microwaving before they were served. Still, I loved some of these dishes so much that I would definitely come back and stick with what I liked and try some new things too. Thanks!

The bar area with the TV seems a little out of place, but I like sports so I'm good with it. The staff were incredibly, incredibly knowledgeable about their food. Most knowledgeable waitress I've probably ever encountered. We ordered the Wild Mushroom Arancini and Whipped Feta & Bruschetta for the table and together they were the perfect appetizer for four people. I'm usually not a fan of wild mushrooms, but it worked well with the crispy arancini. The whipped feta & bruschetta was a nice cooling change of pace, but I wish they gave you a couple more bread bits. For an entree I went with the interesting pork cheeks. They are literally pig cheeks, like the cheeks from their face. And I absolutely loved them! They reminded me a bit of chicharrones, but softer. They were supposed to be sriracha based, but I barely tasted sriracha, so that left me wanting more. The broccolini made up for it, but that's because broccoli/lini makes everything better. Definitely make this a stop when you're in Steamboat Springs.

It took pretty long for them to greet us or bring anything out after we ordered it - I'm talking 40 minutes for our meals, and our server Sam was a little sassy but I'm sure it was just the product of an overwhelming shift. We shared a bunch of stuff for the table, the large steak chimichurri, the burrata, tomato salad, the truffle fries, the kale beet salad, the mac & cheese, and the soup of the day which was truffle mushroom. The stuff was pretty good, I loved the tomato burrata. When I ordered the soup, I asked if it came with any bread or crackers, and he said no, but that he could add in some of the crostinis for me. He ended up charging me several dollars for those later, which I discovered on the bill. That didn't feel right, but whatever. The fries were yummy, the steak was OK and the chimichurri was not even real chimichurri - for $80 for one steak i was hoping for a little bit better experience there. The other dishes were good, but nothing was super memorable here, they did mention that their lunch menu was more well-known and that we should try that, which some of the group did go back the next day and said that it was a much better meal. I know that this is on property at a ski resort and that I never expected prices to be super reasonable, but I was a little bit disappointed for the value here. Giving four stars only because my friends enjoyed their lunch the next day.

The atmosphere strikes a nice balance between upscale and comfortable--refined without feeling overly formal. It's a great setting whether you're there for a relaxed date night or a small group dinner. The riverfront location adds a calm, scenic backdrop that makes the whole evening feel a bit more special. The service stood out as attentive and well-paced. Staff were knowledgeable about the menu and offered helpful suggestions without being overbearing. The menu has enough variety to feel interesting while still being cohesive, and the dishes we tried were balanced and satisfying rather than overly complicated. Overall, it's a strong choice in Steamboat for a higher-end dinner that still feels approachable. They also have a big, impressive bar with those giant, gallon-sized beer steins, which just adds to the experience. The staff was incredibly friendly and welcoming from the moment we walked in. For an appetizer, I ordered these cheesy fritter-style bites (not potatoes, but similar), and they were absolutely delicious. The cheese was a white cheese and so flavorful--perfect start to the meal. For my main dish, I ordered the shepherd's pie, and wow... it was hands down the best shepherd's pie I've ever had in my life. The seasoning was spot-on, the meat and vegetables underneath were perfectly cooked, and the creamy mashed potatoes on top tied everything together beautifully.
