Despite the wording this isn't an IPA but a historical oriented beer classified as a Gruit, an ancient herbed ale. Herbal mixtures were once used to bitter and flavor beer. This was before hops were used almost exclusively. A few unhopped beers survived after hops were used so much like certain beers from Finland but Gruit beers have not so it was a very refreshing and new take getting a beer from Hop Chaos! A lot of the herbs used in this mixture for this beer and the ancient mixtures differed as this beer was going for a Chai Tea. So you got the herbs and spices normally associated with Chai. Cinnamon, clove and peppery flavors were noticeable with this beer that Steve and I noticed and it should go without saying we enjoyed this beer immensely!
