I believe I called in on a Friday for a pick-up the following Monday. As usual, there was a line, but it goes fairly quickly. I get up to the counter, give them my name for the reserved roast and add some green chile twice baked potatoes to the order. I walk over to the register, tell the cashier my name and what I'm buying; I pay and I'm outta there. Easy peasy. If you don't have a trusty butcher and don't want to buy from the regular grocery store, Dickman's is well worth it.

It's worth taking the time to locate the shop. The building looks like new, and is pristine inside. The entry, market, everything, were all completely clean, spotless really. They are currently only open on Fridays. Check the hours before going. The meat (mostly beef when I visited the shop today) all looked great, but I haven't purchased any yet. There were interesting cuts, some fresh frozen and some fresh. I really want to go again - with someone who knows more about beef than I do - the next time it's open. I definitely want to try the beef chorizo. I did get some produce, jalapeño chiles and heirloom tomatoes, both greenhouse-grown on the farm. They also had fresh oyster mushrooms and a couple of other types of chiles.

We bought 2 ribeyes, they came out like crap, we threw them away and I was pretty annoyed. But, I did my researched, realized it was my fault and learned how to cook properly raised beef. Is the store bought stuff delicious? Yeah. Does it have traces of feces in it? Yeah. Is smoking relaxing? Yeah. Does it kill you? Yeah... Since my screw up I've had to relearn how to cook good food. We've tried many cuts and cooked them many ways. Charcoal grill, outdoor flat top, cast iron, oven baked, stove stop stew, slow cooker... We're currently saving to buy a quarter share of beef (should be close to $1000) and just put in a new chest freezer to hold most of it. If that's any indication of how I feel about this beef and how I've learned how to cook it, I hope it helps your decision. I've had many other "grass fed" beefs, and I can't knock them all. But DCR is at my local farmer's markets, so that's why I buy from them. You have plenty of choices, they are convenient and deliver what I'm looking for. Properly raised beef that is dense, full of nutrition and grown naturally. You know, like how our grandparents used to eat. My Grandpa is getting close to 100 and my great grandma lived to be 103. They grew up on farms and at food like this. They also drank and smoked heavily. So, what's killing everyone today?
