We reserved ham 2 months in advance. They called last minute to say they sold out. What's the point of reservation?

Found out about this place through friends as we were doing a custom order for Italian Spidinni…read more(spaducci, spaduch') for a big weekend camping cookout this weekend. I've typically always been a fan of the spaducci sticks from from Vincentina meats but over the years, I've noticed that the size and quality have been decreasing while the price has been increasing. Got a lead on Bonanza who truly is a meat boutique, every possible kind of meat, cut, animal, that you could want in every form (form whole lamb/rabbit) all the way down to fileted, portioned, chopped, etc. Basically if you can dream it... Bonanza can do it! The spaducci we got were easily double the size what I'm used to, and the lamb we perfectly marbled so I know when I eat these in about 6 hours they are going to be juicy, hot and delicious! It's a bit of a stretch to find the place, it's located off of Jevlan which you can access off of a side street that connects to Weston road just north of Hwy 7! The meat is FANTASTIC and the service is impeccable. Joe is a pleasure to work with, and so is the rest of his family, especially his dad, Charlie. Usually I do not tell people about the places I go because just in case they do not like it, but, here, I told everyone, and, will keep telling everyone. Ask Joe to prepare a porchetta for you, and then you cook it at home, it is better than any Vincentina meats, and, cheaper!!! Love it, just love it.,

Dolce Lucano does carries meat but special kind of meat: Salumi, which are Italian cured meat products and predominantly made from pork, that is cured in salt and not encased before aging. Here in Dolce Lucano all their Salumi are prepared in house: Prosciutto, Sopressata, Caccciatore, Capicollo, Pancetta and more. Aside from pork products, there are also cacciatore that made from wild boar. My advice is to talk to the friendly staff here which is so knowledgeable with all the products. We ended up picking up a piece of Gunaciale (jowl of the hog) which is good for cooking. I also want to try one of their house cured prosciutto but I guess I would have to come back another time to pick some up! Now I can start dreaming about a charcuterie plate, a glass of wine and pretend I am in Italian under the warm sunshine......... or maybe even some Culatello!!

What is fresh local, what is made-in-house, what is representative of Woodbridge? Another glance and I dreamt that I could make my own WaYnE brand Salumi. Maybe a dash of szechuan peppercorn, a pinch of... In my dreams~~~ Off I went to meet the local Meat shop in a well hidden path away from everything. Industrial manufacturing neighbourhood more like autobody shops than food eats. We step inside an average size butcher shop space with various items for sale. Dry pastas, canned goods, spices, but Salumi take up a good chunk of space. We go up to the fridge to discover, learn, browse, smell, touch and admire. Meat beautiful meat of various Italian cured and processed varieties packaged. Proscuitto, sopressata, capicollo, pancetta, guanciale to name just a few. As I pick up what I believe to be my choice of Pancetta, a lovely staff came... I had a thorough conversation with this Lady about the cooking with Meat. Ladies, if you wish to gain a Man's heart, simply learn to speak Carnivore. At the end, I was directed to the Guanciale as the Meat weapon of choice. Let's just say my dish of Moyin Moyin steamed bean dish was a fan fav. My accompanying friend says it tastes like Chinese cured meat... but then everything taste like chinese cured meat to her. :P Fyi, many restaurants use Guanciale to begin their soup base. Wish someone can give me a reason or money to visit this shop again. If I go on a regular basis myself, I'm sure I'll need a second mortgage.

We went in looking for lamb meat and the individual that was working there had run us through the many cuts he had in store. He had cut it to our liking and had mentioned a few recipes of his own! I presume he owns the shop. This will now be my go to spot and I'm really excited for BBQ season to start. Keep up the excellent work.

I've been going to Capra & Suidae since it opened a few months ago. Al worked at another butcher…read moreshop before deciding to open his own place. My brother-in-law and I have been getting our meats from Al for over 15 years. The quality of meat at Capra & Suidae is the best in TO in my opinion, but the prices are comparable to basic grocery store prices. ALL of his beef is dry-aged and sourced from small, ethical farmers; most local. Something that very few butchers are doing, because it costs more. Read any article comparing dry aging with wet aging and you will see that dry aging is by far the supeior method of aging beef. Al also ages most of his beef 5+ weeks. Not something you will find at most butchers. I wanted to make special prime rib roast for Christmas dinner. Al was so accommodating in allowing me to pick the cut (with extra fat!) and have it dry aged as long as I wanted it. I decided to go with 6.5 weeks, which is pretty much the peak aging period. Al's passion for his craft is reflected in everything he sells. You will taste the difference and will keep coming back!
