Our first stop in Fredericton! We read from a Reddit post and Google review that this place is highly recommended. When we came in, we can smell the bread and see an island of various flavours of ice cream. We decided to go for the Happy Baker Club, and for dessert the staff recommended the favourite: Blueberry Cheesecake tart. The sub was delicious! You can tell the bread is freshly baked just how light and airy the bread is. The garlic aioli hits the spot. The crust on the tart is very thick and sturdy enough to hold the filling in. It's not too crumbly, it's buttery, and the flavours are not too sweet. You can really taste both the cheesecake and blueberry combined. Overall, a delicious lunch! This place is iconic and the food, baked goods and icecream are incredible. Amazing breakfast sandwiches!!! The only thing that needs to be improved is the iced coffee. Theres no reason this place can't have really, really good iced coffee, or even cold brew. I think it would be a really cool idea to beef up the cafe aspect of the place. read more

I found the layout of the happy baker to be a little awkward. I was looking around and I found some gluten friendly Iranian cookies. They also had some Italian cookies I looked for a price neither had prices, nor did they have ingredients listed. I took the gluten friendly cookies up to the counter and asked what was the replacement for regular flour. The cashier said she didn't know and she didn't offer to find out. I found that a little offputting. While I was ordering a sandwich another worker came behind the cashier and was shouting very loudly and inexplicably. Later, I found the cashier did not get my order right and it may be because she couldn't hear me over the shouting. I had to return to the store to return the sandwich and have it remade. Not a good start for my first visit. I liked the cookies I purchased so I came back again and got them two days later. Strangely the same package of cookies cost 1.00 more on my second visit during the same weekend. I got a receipt both times and noticed the difference later. Did they raise the price that weekend? The lay out of the store also seems to make it a little hard for people working there. Sandwich prices are expensive for what you get. I have never enjoyed a cheesecake or chocolate cake more than the ones that I was gifted from the Happy Baker. Delicious!! However, more than that the customer service was above and beyond, The staff is helpful, knowledgeable regarding the items on offer and willing to go the extra mile to assist you. This is now my only bakery by choice and quality appreciation in Fredericton. I like the layout and vibe and other bakeries go for cutsey but its so fake, Happy Baker is clean, neat, tidy and welcoming. They appreciate customers and its a place where everybody knows your name. Best place in the entire city for ice cream! They have an option for every palate! Sometimes, you can even find the super-elusive grapenut ice cream! I also buy their gluten free bread. It's SO delicious I eat it like it was cake. My only complaint is that their egg replacer clearly does not agree with me. read more

I've been visiting Happy Baker since they were a one-location operation on King Street. Although I was sad to learn that the old Tingleys/Quiznos/Beaver Tails on Dundonald shut down, I was very pleased to discover that Happy Baker took over operations for the entire operation. Here, you will find Happy Baker's standard baked goods offerings, including favourites such as fresh baked loaves of bread and pastries such as the coconut cream slice and the blueberry cheesecake tart. As well, Happy Baker dishes up both hard and soft ice cream and a full menu of prepared sandwiches. On the ice cream front, I took advantage of Happy Baker's soft serve options. In addition to the standard vanilla and chocolate varieties, they offer around 30 other flavours. Being a fan of whoppers, I went for the malted milk option, which was lightly flavoured and came piled high in a sugar cone. This is a must go to place in Fredericton, or a must stop if passing through. Amazing bakery with incredible breads, desserts, and soup. It also has great coffee and a great feel when sitting down for a meal. Breakfast is very good but I can't recommend the Urban Cowboy sandwich enough. One of the best sandwiches I've ever had. We were excited to try the Happy Baker for lunch but the queue was moving so slowly, much like the staff. It seemed that the cashier was taking one order and working it to completion versus letting the other workers help out. It seemed very confused back there.
