Latham has become very hit or miss, if I'm being honest. I'm not sure what happened, if I'm being honest. Now the mochas taste warm (even if I get iced) with grainy chocolate at the bottom of the drink. The quiches are never warmed thoroughly. And if you're worried about gluten free options, do note that many of the stuff put out as gluten free has either been labeled incorrectly or has cross contamination (I have seen them touching other baked goods that were not GF). The service is friendly, but has certainly gotten slower which I don't usually mind since I'm sitting there for a while anyway. It's a cool place to sit and chat with a patio, too!

The inside has a cozy cabin feel to it, though certainly is on the colder side so make sure you have a cardigan, sweater or coat handy. I ordered their toffee nut latte with 2% milk and avocado toast. The total came out to $15 which blew my mind because the toast alone would cost that much anywhere else in Dallas. The toast was made with all fresh ingredients and was very filling. Even though I added everything bagel seasoning it still needed a bit more, so when I got home I added some chili crunch for extra oomph and it was perfect. The latte itself was just ok, pretty mild in terms of flavor...not sure if it was due to my milk or flavor choice as I normally order hazelnut lattes but wanted to try something different. Nonetheless I'm happy I came and look forward to returning, as they have so many other things I'd love to try.

We walked in and it was a good sized bakery that was well lit, bright, with plenty of places to sit. There was a variety of fresh baked breads, muffins, pies, as well as other things to choose from. I wanted a sandwich so I went up to the counter. The person working there was nice. She gave me a few minutes to decide what I wanted. I placed my order, paid, and waited for my name to be called. After about 10 minutes my name was called, I grabbed my order and we were off. As far as the food goes it was delicious. I ordered the Petite Turkey Cranberry Sandwich which comes with turkey, lettuce, apple, cream cheese and honey drizzle. It was the perfect size for traveling and didn't leave me overly full. Overall, Collin Street Bakery was a good place to stop with a clean atmosphere, friendly staff, and several bakery food options.

This bakery has a wide variety of baked goods and coffees, and the building has an old-time feel to it, while obviously well taken care of. My wife mentioned a changing table in the ladies' room (although I cannot remember if this is the case with the men's). The sandwiches were not great, and I would also say not worth the price. Not that any of this would stop me from dropping on by the next time. If you are on your way between DFW/Waco and Houston, I would recommend this bakery (and a no-brainer if you need Supercharging).
