Folds Pizza (not "The Fold") is one of the newest additions to the Joinery as of this writing; the Joinery is one of those places I call "hipster food courts" (complimentary). This is, I think, the *third* attempt to have a pizza place in that spot--and it's definitely the winner.
This pizza is foldable, but it's not New York style; it's closer to a classic Neapolitan style, with a soft, charred crust and balanced rather than overloaded toppings. The flavor of my Margherita pizza was spot on to me, that balance of sweet and savory in the sauce, with good fresh mozzarella and basil strips. The cheese was a bit more melted than I'm used to seeing (usually there are slices of fresh mozzarella that hold their shape in the oven), but still worked excellently.
The service was perfunctory but friendly, and fast enough given that they make the pizzas to order. The atmosphere of the place is, well, hipster food court: kind of loud, possibly a little difficult to find a seat on a popular night. read more
