Definitely a late arriving crowd. Wine here in as excellent, and you can try til you find the one you like. Our three cheese starter was good, least favorite was a Gouda like cheese and the other two were delicious creamy goat cheese and a blueberry bleu cheese. Our dishes were outstanding, we really enjoyed the pumpkin risotto (make sure you like gorgonzola) and the squid ink smoked salmon pasta. The highlight was dessert. We shared a whipped ricotta with gelato dish, an amazing combination of mild sweet and also savory notes. This was probably the best thing we ate in Italy. I had cacio e Pepe but opted not to have the table side creation (4 euro more) , though we did see someone else having that. Dessert - best dessert ever! (The one tip we heard repeatedly from locals while in Italy - avoid any restaurant that had pictures outside of their food or had alfredo, spaghetti and meatballs or chicken parmigiana on the menu.) So, she kindly dropped us off here - at this little spot just off the beaten path. We arrived at lunch time, but were lucky to secure a table outside (dining al fresco in Italy is just a must whenever possible). That said - we just had a light lunch as we had big dinner plans that evening. So, I had only a glass of rose wine and one dish - cacio e pepe. But, here's the thing - I am still thinking about that one bowl of pasta now - more than a month later. It was that good. It's such a simple dish - pasta, cheese, pepper. And yet - so much deliciousness. I've tried to recreate at home, but to no success. I will keep trying. Can't eat Stouffers anymore! The location I believe was either a jail back in the day, or at least is was an administrative office for a jail. I think. It is off the main sites path but it's worth it and close enough to walk off the food to get to next major site. If I make it back to this place I'm for sure coming back.

It seems like a hidden gem known only by the locals. I opted for the Burette with Ricotta and honey. The cheese was creamy and flavorful and worked well on the homemade bread. I thought the cut of meat with Parmesan cheese was excellent, but the steak was a tad chewy. The ravioli with ricotta with basil best I have ever tasted. The flavors are hard to describe, but an orgasmic experience comes to mind.
