This place is a gem! They have an amazing selection of meats and cheeses. I came here to grab some stuff for a charcuterie night and walked away with a delicious 2 year aged Cabot cheddar and some truffle cheese. There's also a very wide variety of crackers and jams! It is a bit on the pricier side, especially for meats, but the amazing staff makes up for it. The staff is incredibly friendly and will guide you to buying the best items just for you. Even though it's just meat and cheese, the whole experience felt very personal. The staff is taking COVID precautions seriously and I've never felt safer in a small store. We were in Stowe for the Christmas Holidays. I ordered ahead from NYC for a boneless Rib Roast for 6 adults. The Butchery were highly recommended and we thought we were set. I went to pick up on the 23rd all excited for the main dish for our Christmas dinner. I found to my big surprise this little package assigned to me for my family for Christmas. I was so surprised that the butcher had assigned to us 3 lbs of roast for 6 adults. I was told by the gentleman and his associates that an adults gets 1/2 lb each of meat. It was the most outrageous experience we had in this wondrous world of ours. I've never ever experience such low and poor professionalism anywhere. Don't ever trust these butchers if you ever want more then 1/2 lb of meat for an adult. read more

Higher end amazing butchery! Just went in to be nosy and see what they had. I got a few cooked shrimp with their homemade cocktail sauce. Once that was packed, I saw they were just slicing a tuna sashimi. Pretty expensive stuff but I had to try it! I went to the Butchery a few years ago to buy some meats for a ski trip. The steaks were amazing and completely fair priced. They made for a fantastic dinner. I bought their amazing Butcher's Salt there and brought it back to Brooklyn, NY to make dinners for friends. It was such a hit all my friends wanted a tin. Not living close to Stowe, I contacted the owner to see how I could get more and he was beyond helpful and gracious about it. This is my regular spot for the Faroe Island salmon. It's not like any other salmon I've had before. It cooks well, it's excellent raw, even the marinated version is great. But yesterday was the Cubano day. I have a thing with this sandwich. I seek the perfect one and wrestle with the concept of the Cubano itself. It shouldn't be interpreted. It shouldn't be tweaked or reinvented. It should only be perfected and perfected it was by The Butchery. Each ingredient was perfectly made, constructed, and pressed into an easily bitten sandwich. And just like it's country of origin where the Atlantic, Gulf of Mexico, and Caribbean meet and blend, so too does the sea of flavors of pork, cheese, pickle, mustard, and bread. They meet and mingle perfectly in this sandwich. Very nice place, made a purchase here and after I got home, I found that one of the items I had bought wasn't in the bag. I couldn't find the receipt, So I called the store to see if I had been charged for the missing item. It turns out I have not been charged and the store owner offered to give me the item for free to make up for her mistake. Needless to say I was really pleased! This place has great service! I stopped to pick up Halibut one day and ended up also purchasing their Roman sausage. Both were completely delicious! We can never find sweetbreads so I asked if they had sweetbreads. Although they don't carry them regularly, they were happy to order a 10 pound quantity for me, vacuum pack them in smaller quantities, and charged me less than the initial quote. I made the first batch using the recipe for Ris de Veau de Lait à l'Ancienne and they were so amazing -- tender, delicious, a real taste of France! I am very picky. My wife and i are locals and we truly needed something like this here. Steaks are next level and the seafood is fresh and the choices are great. But more than that we had a little gathering for a football game and they made us muffuletta sandwiches which were out of this world ! Seriously this was the best sandwich i have had in years. Fresh Italian meats and cheeses. Fresh baked focaccia bread and just the right toppings toasted and delicious ! My new knick name for them is the " Muffuletta Whisperers " and it is for good reason. Everything we purchased was exceptional: fresh halibut, house-smoked salmon, and a ribeye steak. We poached the halibut and it was delicious. The steak was thick cut and we grilled it to medium rare.
