Shrub is a sweetened fruit infused vinegar. For the float they use the shrub (from local vendor Girl Meets Dirt), seltzer water, and your choice of ice cream. I definitely could see this being a summer drink. Has a bit of a bite from the vinegar (I'd advise to make sure it's all fully incorporated or you'll end up with a straight shot of the shrub).
