It's a fun place to dine, and I'm not just saying that because we were able to order a pitcher of Aperol spritz (okay, maybe a little). The atmosphere here is just plain fun, and the decor is cool, especially that circular bar in the middle. We enjoyed everything we ordered. The polenta fries were delicious and paired well with the tomato salad. It continued with my Grilled Half Cornouailles Chicken, with chimichurri, and it finished with the Basque Cheesecake. Darling is likely to become a regular favorite on future trips to Montreal.

Also one of the cons of fine dining is that typically it takes so long to receive the next dish. I think we received a new dish every 10-15 minutes and if they saw us finished with one they were already preparing the next one to be served.

A couple were interesting and well paired, but most were just "ok" and having this many back to back just makes you wish for a balanced red or a crisp white to break things up. It felt like a wine pairing from someone that doesn't actually like or understand wine and so just thinks anything "funky" or "natural" is somehow better. La Distillerie does mixed drinks like no other. They also do it with a heavy hand so while it may seem pricy to some, you definitely get what you pay for. My friend and I had some beer before arriving and then two drinks each here and both walked out very much not sober. The vibe is chill and a bit nostalgic and the menu options are exceptional.
