A superb little ramen joint where the owner's passion for both the craft of ramen-making and the ritual of eating it really shines through. The broth is excellent in both the Miso and Kuro ramen; the Kuro in particular was a standout, especially paired with the house-made gyoza. The kimchi tasted fresh, and it was great to see real wakame used rather than a shortcut substitute. The wait staff is a bit inexperienced, and the restaurant layout is awkward. Reservations are apparently recommended, and this isn't a place to visit if you're in a rush. Still, those minor drawbacks are easy to overlook given the quality of the food. You'd have to drive into NYC to get better ramen. Highly recommended. read more

I know noodles. I know soup. I don't know authentic ramen. And because of the first two, hubs set out his sights and appetite on coming to Tanma on Broadway in Kingston, NY. Plus, we were craving a soul-soothing, heart-warming bowl of noodle goodness to warm us up from the inside out. Tanma's front counter space is petite with about 6 stools and giving you an eyeful of ramen magic in the kitchen. The izakaya is fun with Japanese rock music playing- which loosely reminded me of Kill Bill's 5.6.7.8's scene. Tanma's owner was thorough and gave hubs and I a crash course on bowl+spoon placement, aligning the wakame to be at the front, sipping the broth first, pulling noodles high and dipping them in and out the broth. And then just then you move your head closer to the bowl, so that you can take in the delicious ramen combo without spilling any and slurp it up. I've had ramen in Scarsdale with a clear veg broth, topped with crispy tofu, grilled tomato slices, Napa cabbage and other grilled veg. So getting an all-veg broth with a splash of coconut cream to mimic pork broth here wasn't what I expected. Getting an all-clear veg broth here isn't an option either- but what's important is we were assured it's a herbi-broth that's used. The kimchi, bamboo shoots and shredded cabbage toppings were nice- but I opted out of the vegan chashu instantly. Again, I was assured it's vegan- but no thank you. This was an experience for both of us- and we liked it. So whether you're a ramen pro or curious newcomers like my husband and I- and you're ready to dive into the deep end of this noodle soup pool, Tanma is the place. read more

Had high hopes for this place, it exudes authenticity, but we had several problems. The first is the menu selection. The only two options for appetizers and ramen are pork or vegan. I don't eat red meat, but I am also not a vegan. A chicken option, or even an option with a hard-boiled egg, would have gone a long way. The second problem was that my 2 appetizers, hyaku tofu and vegan dumplings, did not taste good, and I'm not a fussy eater. The tofu was served freezing cold, and -- this has never happened to me before -- the fish flakes that they served over the top got stuck to the roof of my mouth, had the texture of paper, and not a great flavor. The dumplings were served in a cast iron skillet and -- this also has never happened to me before in a Japanese restaurant -- they stuck to the bottom of the skillet so when I tried to remove them, they started to fall apart. The dumplings, I could not isolate which ingredient it was that gave them the off-putting taste, maybe it was chrysanthemum? They weren't gross, but they weren't good. My vegan ramen was somewhere between OK and good. Next, the sign in the window says "walk-ins welcome," but we were told we had to sit at the bar in the front room, despite the fact that there were empty tables in the back room, which is very dark and kind of grim. The stools at the bar are not comfortable, and if you go there when it's cold, you get blasted with cold air every time someone opens the door. Last, the service was sub-par. Disliked the food and owner's attitude and how they treat the customers. We booked an reservation a week early and at the time when they opened, the restaurant is completely empty, but they still sat us at the very tight counter bar. No one ever come by to ask us if we want water or anything. The food is merely edible. The ramen is ok but the gyoza is the worst i could have eaten. It is not even fully cooked in the center with very thick skin. Most astoundingly, I was scolded by the owner to eat my ramen with a spoon. I do not appreciate her approach in "educating" the customers. It would have been better if she took a softer approach. In addition, the ramen is already cold by the time her education on "how-to-eat-a-bowl-of-ramen-properly" is over." We would never return or recommend this place to anyone. read more

Hidden gem!! You can't judge a book by its cover. From the outside, it looks like a tiny, hole in the wall noodle bar. I admit, I thought the same thing as I drove past it every day. I was wrong... Make a reservation!! That way you can can walk and and then be amazed with the little back room. It's like walking into a noodle house speakeasy. If you don't, there isn't anything to worry about. You can sit at the noodle bar up front and enjoy the exact same delicious meal. It's all about the ramen bowl but you absolutely have to try the appetizers. They are all amazing. I can honestly say that I have never had a worse Ramen experience. The dumplings were almost tasteless, gummy, and stuck to a small skillet in which they were served. They were so overcooked that they disintegrated as we tried to remove them from the skillet. There was nothing fresh or interesting in the Ramen that I had, which was the vegan option. Again, almost everything was flavorless. It was a completely baffling culinary experience. Listening to the chef make slurping noises again and again to illustrate how diners should eat their soup was incredibly offputting. The restaurant feels cold and dismal, and that certainly did not help things. Lastly, our sake was served in a small glass jar, that could not be poured from without spilling the precious liquid everywhere. The shape of the jar also ensured that the sake cooled very quickly. Never going back. I do not doubt that the chef and the owner of the restaurant have great intentions, but the results are so very far from anything even remotely resembling a pleasant dining experience. read more

Very friendly, warm, informative! We tried the gyoza - light and extremely flavorful. And the kimchi cucumber appetizer was refreshing and spicy. I love the offering of a "baby ramen" because my eyes are always bigger than my stomach. It was the perfect size. We both had the miso ramen, very tasty. I would give 4 stars if there was a different style of giving how to eat ramen instruction. The ramen I ordered (miso) satisfied my pallet. I disliked the how to eat ramen instruction given by the owner which lasted a few minutes after the ramen was delivered. Her passion for teaching what is the correct way to eat ramen does not only make the ramen broth less hot as well as unsanitary by lecturing over my food. We decided to have dinner here during a college visit trip. MAKE RESERVATIONS! We didn't realize we needed to make reservations but we got lucky that they were able to seat us at the "ramen bar'. We enjoyed that probably more than if we sat at a table. The owner spoke to us about her restaurant and how the food is made and the proper way to eat ramen. The ramen was delicious! Discovered Tanma Ramen on a whim with some buddies in the Kingston area. We were unaware of the reservation policy, but were seated promptly. The menu is simple and small. Service was a little frustrating because we had multiple servers asking us the same questions, and they clearly didn't communicate to each other. The owners were super sweet and kind! Next time I visit, I definitely will request a table and not sit by the bar...The bar is very claustrophobic. I love the complimentary snacks and ice cream at the beginning and end of my meal! Went here on a Friday night and had a reservation. We got seated immediately and the server asked for our drink order. We had the dumplings and spicy cuke which were both fine. We placed our ramen order and then waited 45 minutes for it to arrive. Wasn't crowded at all so not sure why ramen would take so long. Was nothing special and the miso broth was very watery. This was a very strange and unique experience for a restaurant. There is a sign on the door that says reservations required, but that was not indicated on the website. We decided to ask anyway, and they did have a table for us but we were reprimanded for not making a reservation. The owner was our server, and she was very passionate and knowledgeable. The strange part was that when our ramen arrived she would not let us eat it or even touch a utensil until she gave us a lesson on how to eat it. It was very strict and detailed. At one point one of us laughed at something because we were trying to enjoy and have fun while learning and eating, and she said "this is not funny. It's very serious." It was uncomfortable to be watched very closely (like actually very close), evaluated on how we were eating, and corrected, especially for the person I was with who had a disability and was not able to do it the exact way the owner instructed. I appreciated the lesson and explanation and it was certainly interesting, but it was not exactly a fun or relaxing experience. The food was excellent. Definitely recommend getting some dumplings to start. I would go back now that I know what to expect, but some of the people I went with were so uncomfortable that it was overall not great. read more
