Pollo is also good not dry. They have four salsas that are self serve, the greens are my preferred, not too spicy. The reds are mostly spice and less flavorful, they made me tear up a bit. Also self serve is limes, pickled onions and carrots/veggies, and sliced radishes. Really like the pickled onions and sliced radishes with the tacos, I've found them to be fresh every time.
