The large seating area is clean, and the ordering area is modern, with large menu screens. The food is formatted so that you select your protein variation and then a presentation, which could be a quesadilla, nachos, taco, sandwich, or bowl. If you really want more, you can select a side dish. We decided to try pork nachos and a birria quesadilla. The service was top-notch, and the staff was super friendly. Unfortunately, it was a big letdown. $15 nachos had very little pork but lots of convenience store nacho cheese sauce, which was not at all what I expected. They also were missing a mess of normal nacho toppings, and those that were on it were scarce. More than half the chips were dry. The quesadilla was unremarkable. The cheese used was not high quality, and it seemed average at best. Overall, I am disappointed as I would have loved to have found another option in Brighton. With the fun atmosphere and lots of TV, it would have been a good place to grab a bite, a beer, and watch the game or meet with friends. Hopefully, they get it dialed in or lower their prices to reflect the actual product.

The pork might be roasted before adding it to the stew, which gives it a great flavor. Tortillas are good. I'm a sucker for carne asada fries, so we've shared those and enjoyed them. No cheese sauce but real cheese on them, which I prefer. The one burrito I've had was not my style. The veggie burrito had refried beans, cheese, rice, and lettuce/tomato/sour cream. I'm not a fan of rice in my burritos, and the cold lettuce/tomato/sour cream detracted from the warm, comfort-food feeling I usually get from a bean burrito. Lettuce and tomato aren't the veggies I imagined I'd get, but that's not their fault. In all, this is a solid takeout choice if you're in the area. If you enjoy chile verde, this place is not to be missed.

My mom and Tia made them the best, and even though I tried, I never did master it the same way. I came across these tortillas a couple of years ago at a Mexican tienda near my house, but they stopped distribution of them and replaced them with a poor substitute. I travel from Broomfield to Brighton at least once a month with my cousin. We do a "tortilla run" not just for us, but for friends and family. We must look crazy when we walk in and order over 20 dozen each, but the taste, quality and price just can't be beaten. You can see them manufacturing all the tortillas behind the counter, no secrets here. The smell is divine and there are a few mexican products that can be purchased from spices, candles, dairy, candy and snacks. I love to have a Mexican Coke in the glass bottle, a warm tortilla and to restock on some of my pantry items. The place isn't big at all, so no major shopping can be done here. However, they offer multiple types of tortillas, corn: regular and taco size, flour: large and regular, wheat: regular. All are made without preservatives so must be stored in the fridge or can be kept frozen until needed. They thaw perfectly, so no worries about storage. Once you have one of these, you will never have a store bought tortilla again!
