They understand what you're asking for (I've been to places where they just want you to list off the item #s from the menu), will answer questions, and even sometimes clarify what you're asking for (my fav is the chicken chow mei fun and they always make sure I know it comes with the thin "spaghetti" noodles (they say that, but it's really thin rice noodles)). The chow mei fun does not contain as many greens as I like (contains shredded carrot, onion, mung bean sprouts, and bamboo shoots) so I always add a package of steamed peas to it which makes the quantity of the food large enough for 2 meals.
