What started as a handful of niche noodle shops is now a full-on culinary movement. All across Jersey, ramen chefs are crafting rich broths, house-made noodles, and inventive toppings that delight the senses. Located on State Street in Hackensack, I frequent this establishment numerous times during the year. Ramen Azuma pours out their soul in preparing perfectly the classic Japanese cuisine. Upon arrival, I was greeted by the staff and got an empty table by the window inside their cozy and inviting vibe. Their menu features a wide selection of ramen, curry, and appetizers. I decided on their newest edition--Wonton Ramen and 3 pieces of Fried Chicken. The savory ramen soup was filled with shrimp wontons. Even though they were very thin wonton wrappers with a smaller amount of filling, they tasted consistent with other shrimp wontons from past restaurants, accompanied by Menma Bamboo, Scallions, and Egg. The Fried Chicken was well seasoned. The food overall remained authentic and incredibly flavorful and on point. The portion was very generous. Friendly service, and the price was reasonable. Make sure one comes on an empty stomach.

My dining partner and I were seated rather quickly. Our server took our drink orders and came back promptly so we could order our food. The menu is pretty extensive but we ordered an assortment of skewers and a bowl of ramen to share. The skewers came out little by little; about 3 skewers per plate. They didn't come all at once so I assume they bring them out as they finish getting grilled. The chicken heart was some of the best I've ever had. I'm not sure if it's the way it was sliced, the seasoning, or just everything about it but I wish we ordered more. The tail skewer was another standout. It had so much crunch that it was almost like it was fried. The flavors were rich and varied. Each skewer cost upwards of $4 so that's a bummer. Unfortunately the ramen wasn't so great. Not terrible, but not great either. Especially not great for $19. Not my first choice for ramen. Is it the most bang for your buck? Certainly not. But I did enjoy my meal and in the end, that's what matters.

Our servers couldn't answer basic questions about the menu, which is already hard to follow if you're not familiar with Japanese terms. It left us feeling lost rather than guided. On top of that, the pricing is steep for the suburbs -- $5-$8 per skewer adds up really quickly, and it just didn't feel worth it given the atmosphere and service. All the yakitori was decent but nothing mind blowing, smaller servings and overly salty. To make matters worse, the tap water was awful -- honestly undrinkable. Look at my picture I'm shocked they thought this was acceptable to bring to our table. The food itself may be authentic, but everything else about the experience dragged it down. Unfortunately, not somewhere I'd come back to.

I think it's great for most types of occasions, and the only reasons it's not getting 5 stars is because I do think the prices are a tad higher than I would've hoped and I think they could've done a bit more in terms of designing the place to match the price point. The plate looked very attractive and well presented. It came with fried chicken cut into pieces, ramen noodles, shrimp, and a spicy touch that added a lot of flavor. The dish also comes with a sauce that you can either pour over the plate or use as a dip. I personally preferred dipping the fried chicken instead of pouring the sauce over everything, which kept the chicken crispy. The combination of fried chicken, noodles, shrimp, and the spicy flavor worked really well together. I really enjoyed it, and this has definitely become one of my favorite dish of this food stands inside the H-Mark market. The food court is shared with other food stamp. There's always a table that you could grab because people tend to eat and leave fast. And there is always a staff ready to clean the tables if they're dirty.
