What a cute little coffee shop in downtown lake Elmo! My boyfriend and I came by to have a coffee and study, it was a great experience overall. The matcha I got was delicious and he loved his maple coffee, it was a bit expensive at nearly $7 for a 10 oz matcha though. The barista was friendly and our drinks came out quickly though! Also they have street parking right out front that's free which was perfect. We chose to sit outside to get some sun, there is a bit limited seating inside especially since we came to do work. It's such a vibe inside. The employees are super friendly and welcoming. I ordered the miel iced and my mom tried to brown sugar spiced latte which is a seasonal special. We both really enjoyed our drinks. We then tried the pumpkin muffin, chocolate croissant, and apple lattice. All of the baked goods we bought were delicious. We will be back! Sunshine Coffee is delightful! A very happy, inviting space with excellent coffee and matcha drinks. Their merch selection is joyous.

The coffee is great but the sizing is super small with the same prices as other coffee shops.

If you read any of my other coffee shop reviews, you know I love a local place over a chain any day. We were driving through on our way to Stillwater and hubs wanted a coffee. I knew there was a cute place in Lake Elmo and we stopped at Sunshine. The space is VERY small, but really cute. It literally feels like sunshine when you walk in, everything is bright. In my opinion, there are several similarities and comparisons between coffee and wine. Neither of which I have a lot of education in. For years the only way I would drink coffee is if after pouring in some sugar, "the spoon stands straight up" (Christian Slater in True Romance). As I have gotten older, I have begun to learn a bit more and my taste have refined some. Still a long ways away from where most coffee drinkers are at and that was the reason for this days visit. We planned to make a special meal for my father in law. My "pa" enjoys his dark roast coffee. I knew that they ground their own coffee so after a little Yelpsearch, I found Sunshine Coffee Roasters. They are located conveniently in Lake Elmo and were quite busy this morning. The ladies that helped us were quite friendly and even taught us that there are different grinds available. Everything turned out great. After surprising pa with his meals, turns out they have made the trip from St Michael to Lake Elmo and have previously been to Sunshine Coffee Roasters. Such a cute little coffee shop! My sister and I stopped in for a late morning latte on a rainy Saturday prior to long overdue sister bonding. My sister lives down the block from here and always raves about this adorable coffee shop. Great cozy bright spot in a great area in Lake Elmo. Staff are friendly from the minute you walk through the door. Coffee was great. I love coffee and love to support local. I'll be back to try something iced now that the weather is getting warmer. It's so great to finally have an independent coffee shop near us in Woodbury. Not that I don't get some Starbucks every time I go to Target, but it was great to find Sunshine Coffee just down the street from me. They also have great croissants and a lovely seating area. Best coffee shop MN, period. We've been in town for quite some time with family and now prepping to leave I've loaded up with plenty of liquid for my drive. A small spot but massive with their service and their ambiance. Perfect place to sit outside, although the weather finally just allowed it. I tried some of their food and the only down side is they don't have a warmer or oven so their great food comes only at room temperature. Highly recommended and hope they grow fast to other location west. read more

In the meantime they are selling coffee beans which are roasted on site. Stopped by and said hi while they were still putting finishing touches on the new interior. The new owners plan to install a walk up window for those on-the-go and they will add additional outdoor patio area for warmer weather coffee consumption. They may even sell ice cream! This coffee shop is adorable! If you live in Lake Elmo, it's very walkable. In the summer months this coffee shop is so busy because the majority of their seating is outdoors. I do not recommend coming here to work because there is limited indoor seating, maybe only 2 tables. The coffee, pastries, and baristas is what makes this my favorite coffee shop. I love getting a lavender iced latte and pairing it with the gluten free breakfast items they have. They're also dog friendly!! read more

This place is a very cute local coffee shop. They have limited but yummy food offerings. The coffee is always good. My critiques would be that their to go coffee options don't come in a large enough size and there is extremely limited seating. I was hoping seating would be addressed by the new owners but sadly there were no major changes. There are two tables that are always full and 6 small stools at a counter. My 6 year old son noted the stools were very small. I wish we had a local cafe option that allowed for more seating to facilitate people who want to read, work, socialize, or come with kids. read more

And the coffee did not disappoint...EXCELLENT quality of coffee with ALL of the milk options (including whole milk and oat milk). This coffee beats the national chains' coffee by far. Several treat options including gluten-free. The staff is fun and friendly. The to-go cups are commercially compostable (so I can take them to the industrial compost area of the Washington County Environmental Center instead of tossing them in the trash). The coffee shop has tables for sipping and chatting as well as a standing-height counter by the window for using one's laptop (and counter-height stools for those who want to sit there). An OUTSTANDING neighborhood coffee shop at the heart of the little town of Lake Elmo Minnesota. Out from Oregon visiting my daughter and grandkids and happened in for a coffee mocha. I was greeted with a smile and a welcome. I ended up visiting Sunshine Coffee every morning for the 10 days of my visit. The selection of home made sweats are beyond exceptional. The prices are less than the big chains and the beans Sunshine were using were smooth and delicious. By the third day they called me by name and greeted me with a great smile. Parking is very convenient on the street. Sunshine has several tables out front if you happen to catch a sunny day. If you are anywhere near Lake Elmo, you must stop in. read more
