I live in Corrales and pass by this food truck regularly. I have never stopped and ordered, however. Until today. And am I glad I did. Not knowing anything about the menu, I opted to try the Duke. Great choice. I had mine with pulled pork, with my chile on the side, so I could taste the original item and add the New Mexico flavor if needed. I loved the original version and confess I did not add the chile the second time. Service was great - delivered to my car in the Ex Novo parking lot. Ambiance is outdoors or take-away - how can we complain? Next time you are driving through our village and see the red food truck on the west side of Corrales Road near the fire station, pull in and give them a try. I'm glad I did. read more

Stuffedlust specializes in both sweet and savory sopapilla plates, and everything looked so good it was hard to choose. I ended up going with the "Gila Monster," and wow--the flavors were amazing. We tried their stuffed sopapilla plate and loved the chile sauces (I usually prefer green but really enjoy the red here too) and really liked their Spanish rice. I liked that they had vegan and vegetarian options. The sopapilla itself was less crispy / golden than I was dreaming of, though I am generally more into sopapillas on the side than stuffed. We met a couple of friends at Ex Novo in Corrales and was happy to see they were there. My husband and I ordered the vegetarian sopapilla made with jackfruit. I must say this was our first time trying it and boy am I glad we ventured on something different. The stuffed sopapilla was smothered in green chile , but you can request red Chile or Christmas. Our friends had the tacos and the stuffed chicken sopapilla and all of us finished our plates. I highly recommend trying this amazing food truck. I was ready to order but got sparkled by some cute conversation with one of the owners so I decided to try their Pulled Pork sandwich special(I forgot the name on the menu). Holy the Devine aroma made me rush home! It was in fact insanely delicious! Tender and bursting with flavor on a butter toasted bun! It was heaven!
