We had an amazing dinner here. The restaurant was a bit out of the city center, but it was worth…read morethe short trip away from the tourists. The entire menu was creatively planned. We got the following and enjoyed every dish:
* Deep-fried trout, caramelized carrot sauce, green pea, and lemon mayonnaise
* Beef tartar, lovage mayonnaise, egg yolk cream, parmesan custard, smoked almonds, and bread chips
* Koprovka, dill sauce, grenaille potato, and egg
* Pan-fried duck breast, potato fondant, pulled duck leg, carrot purée, and sea buckthorn
* Caramel mousse, condensed milk, caramelized nuts, fresh cheese ice cream
The Eatery did a very good job modernizing traditional Czech dishes. For example, the egg that was used in the koprovka was a 62'C sous vide egg for 1 hour, which added a very nice modern touch.
Service was attentive, but casual. We felt like we were dining at a good friend's rather than at a restaurant.
