Potatoes and sweet potatoes are the stars at Spud, a restaurant franchise that specializes in bowls centered on these freshly baked root vegetables. It's a concept that I never could have imagined before, but all the offerings here make for simple yet healthy, delicious meals! On my visit, I had the poke bowl, which came with edamame, corn, beets, seaweed salad, avocado, and turmeric sweet potato chips, all dressed with vegan mayo. Though nothing particularly unusual, every bite of this was refreshing and tasty. I especially liked how the soft sweet potato at the base came with parts of the skin as well!
