I purchased a 8 pound tenderloin and was told it was choice beef for $20 a pound for eight pounds min. When we were about to butcher it we found it was stamped select beef that was very fatty, as you can see from the picture. I was only able to get 4,6 pounds of usable meat from the tenderloin making it some of the most expensive select meat I have ever purchased $34.63 lb. And half ended up being filet cubes due to the amount of fat. I don't know if this normal, but I will not be back again.

He took us on a guided tour of his facility. We got to see the hams in the process of curing and the storage rooms. Also got to see the staff processing bacon and packaging it.
