For gastronomic eaters, Casa Amate will satisfy your palate. Casa Amate's menu and ambiance are eclectic. Being in Mexico, I had to try Casa Amate's version of the ceviche, which was the Kampachi Ceviche in Leche de Tigre Cream and Rocoto. Most ceviches are marinated in the same ingredients: lime, tomatoes, jalapeños, red onions, and cilantro. Casa Amate's ceviche was unlike anything I've ever had. Instead of the usual ingredients, the Kampachi Ceviche used roasted corn kennels, sweet potato slices, cornnuts (canchita) and was served on a pool of rocoto chile cream for the eater to mix as desired. For the main course, I ordered the Pampa y Costa, which was oyster and wagyu with chimichurri sauce, served in a large oyster shell. The oysters were the star of the show, while the wagyu and chimichurri sauce didn't really add much to the dish itself. We ate here two years back and have returned to the resort again, so here we are today for a late lunch. We've been here for a couple of times for lunch. It's basically a salad bar with some cook-to-order burger offerings. I've had both a beef burger and a chicken burger here. Both have been excellent. Mexico isn't generally known for the quality of their hamburgers, but the ones here are just fine, easily the same quality of any of the mid-priced corporate dining offerings back in the states. Salad bar was lovely, ingredients were fresh, no complaints at all. Service is great, and it's an easy and fast in-and-out for those looking for a quick eat. Next time we're down here we'd definitely eat here again.

I knew that we'd be tired from travel, and I figured that Brazilian barbecue is pretty fast between the buffet and the waiters bringing meat all around. Service was excellent. Our waiters were very attentive. In addition to keeping our plates and drinks refreshed, they would check in on us and make sure that the meats we wanted came back to our table. Food was fine. The buffet was not my favorite, and I did not like that the buffet was essentially outdoors in the September heat. (I skipped all seafood-containing dishes.) The meats were pretty good. I liked the tamarind chicken and the sirloin but found most other meats pretty forgettable. This is no Gauchos (Glendale) or Fogo de Chao or Texas de Brasil. The offer the same generic kids meal that all the resort restaurants offer. You can get them for your kids, or you can have your kids eat the churrasco.

I've definitely had better but the base of it was unique and not as creamy as I am used to experiencing. The salmon dinner was good, but the shrimp main course was devoid of seasoning - making it less than ideal. I appreciated the sorbet that was offered to cleanse the palate between meals. Lastly, the key lime pie was pretty good but heavy on the marshmallow and light on the lime flavor. Great atmosphere but I certainly enjoyed other restaurants a bit more at the Hilton.

I think it's safe to say that we saved the best for last! My one complaint is regarding the availability of reservations. We went to the concierge desk to make a reservation for a Sunday on a Friday morning, and they only had a 9pm reservation left. That's a bit late for us old heads, so we instead opted for a Monday night at 6pm reservation. Thankfully we were staying through Monday night - I would have been very sad if we weren't able to check this place out. Though the hotel says you need to make reservations before 2pm on the same day, I would suggest securing your reservation as early as possible. The service here was absolutely impeccable. Our wine and water was always filled and the courses came out in a perfect time-frame. Our waiter was super nice and attentive, and they were very accommodating to my husband who is allergic to penicillin/mold/BLUE CHEESE! Clearly he could not eat the Gorgonzola soup, so they substituted a delicious vegetable soup for him. From start to finish, I enjoyed every single bite. There was not one thing that I ate and reacted to with a "meh." You can check out the photos to see everything I consumed, but I could rave about each dish (especially the whiskey truffles). I left feeling full and treated like a superstar. The violinist was also a great touch!
