The Owner was…read moredoing a demonstration on how to sharpen a knife and my mom secretly bought us a pig butchery class for Christmas. We went to the class a couple months ago and it was amazing. We started with two pig halves and got to break down the pig with very minimal help from the instructor. We learned a whole lot and we got to take 25lbs home each. The whole environment/shop was very clean and organized. We did have a chance to look around the shop prior to the class and the owner was very friendly and answered any questions we had. While I didn't end up buying a knife from here, I do plan on it when I have enough in my budget to spend on a knife, as I'm not a professional chef. Gage (the owner) knows his stuff and will sharpen one knife for free when you come in and he does a great job. Cleaned up and sharpened my mom's Japanese knife that had gotten rusty. I recommend all my chef friends to go to him for knives, so I have to recommend any of you reading this should check it out. He's got a great selection of amazing knives.

Before long, Peter, the owner, responded, giving me a very reasonable price. We communicated by text for a few days to set up a time convenient for both parties and then drove over. Peter is very affable and certainly knows his stuff. In about an hour, he had both the knives done, the angles perfect, and both sharp enough to glide through the white sheet of printer paper that I had brought for the test.
