We decided to try Island Thyme Food truck. First, the colors attracted me and the owner of the food truck was very welcoming and explained the menu for us to consider. Because it was hot, I wanted something light and refreshing so I ordered the rainbow bowl. Delicious! Quinoa at the bottom of the bowl, and topped with black beans, sliced purple cabbages, small pieces of sweet potatoes, salads, carrots, and sweet Thai chili sauce. Overall just a refreshing delicious bowl of yumminess. I love the sweet Thai chili sauce to give a sweet and tangy taste. Again, I'm a huge fan of food trucks and food stalls and this was a great food experience! Relaxing hang out place with friendly folks (I'm pretty sure most are visitors as well staying at hotels nearby), picnic shaded tables...what else can you ask for? If we're ever back in the area again, we'll definitely try other menus!

Service is friendly, you have to order at the bar and flag people down to get people's attention. I ordered the peak pizza. It was outstanding and super yummy. The sweetness is the more prominent flavor. The meat patty was pretty good; beefy and buttery flavor. Came with blue cheese but you can ask for a different type of cheese. Also has side dish of your choice. My friend chose the side salad with ranch dressing. Dressing was good; almost tasted like buttermilk ranch dressing. But the spring mix salad didn't have anything else on it; no croutons nor cheese. The Caesar Chicken Salad was a huge portion and nicely plated. Choice of grilled or fried chicken. Got the fried chicken; chicken pieces with breadcrumbs coating was moist and tender. The breadcrumb coating was not salty which is good because it didn't make the salad too salty. Had lots of shaved parmesan cheese. Lots of croutons. Also had cucumber slices and tomato wedges. The Caesar salad dressing was a bit salty. I wanted the grilled chicken but staff said it will take 20min to make it but the crispy chicken will be faster. The huckleberry ice cream is a must try especially if you have not had it. It's my first time having huckleberry ice cream or any huckleberry flavored. The ice cream tasted like a cross between cherry and strawberry. The staff said it was Blue Bonnet brand from Washington. We were seated outside which was cooler than inside as many places do not have air conditioning in the area. The server was clearly from another country so some of his English was broken. He let us know that it might be a minute since he had just taken a large group's dessert order. He meant no harm and we knew that - cultural differences in speech delivery. We saw quite a few teen aged workers at our time around GNP so we wondered if there's a work program. Anyways, with the view we had, he could take all day. We got our drinks which were so good. Our food came out within a reasonable amount of time. My steak was a tad overcooked but it was still delicious. A train came by during our visit which was so fun to watch! Unfortunately, they ran out of the huckleberry cheesecake so I did not get to try that - super bummed! I can't remember how much the bill was, but you expect to pay more in a place like this I guess. Ask for some of the yogurt dip to go with them. It was hard to choose a favorite desert between the apple crisp and fudge brownie. Service was friendly and attentive.
