Ordered a burrito and got only ground beef wrapped in a shell and it was soaked. Got hot wings that had zero spice and tasted like fried chicken. Also wasn't chicken wings, but chicken legs. Was pretty disappointed in what I got and couldn't do anything about it because I got delivery. Salsa I got with it was flavored salsa water basically and just made my burrito even more soaked. Luckily my hot wings (in a separate container) were placed on lettuce and tomatoes, at least I could have that on my burrito. Anyway, never ordering from there again. I visited Sol De Mexico years ago and at the time wasn't very satisfied. The food was greasy and tasteless. As I was in the mood for Mexican and wanted to go someplace new, I decided to give it another try. This time was different. Upon entry, the place was pretty empty. I don't know what it is about restaurants on Lakeway but they seem to be cursed...except for Rhodes. I was immediately greeted by a friendly gentleman who showed me to a table. The seat covers on the tables are ripped and in dire need of replacement, but as a small business owner, I understand you need to prioritize capital expenditures. The place is bright and music is playing in the background. Chips and salsa were served along with some freshly made pico. The salsa was...meh. The Chips were small (I like my chips BIG) and only luke warm...but it was made up for by the freshly made Pico which was seriously DELICIOUS! I ordered water to drink and they brought an entire pitcher (much appreciated). As I was waiting, one of their children ran through the restaurant laughing and playing. I actually don't mind that...it shows that it is truly family run and I wasn't disturbed by it. I decided to order the Steak and Chicken Combo Fajitas. Once served, which happened with reasonable speed, the serving was generous and the plate sizzling. A pair of tongs is provided. There was a separate plate with a generous quantity of rice and beans...generous that is except for the Guac and Sour cream, though to be fair, no Mexican place in this area ever gives you enough Guac and Sour Cream. Plentiful rice and beans, though a side of cheese would have been a nice touch...I've yet to see that in Bellingham. Rice could be just a little bit more flavorful, but it was decent enough. I ordered corn tortillas initially. They were nice and hot. The meat was good...not great but good. The beef cut was a bit on the stringy side but was plentiful. There were plenty of vegetables and I quickly went through the first batch of corn tortillas and decided to refill with flour. Somebody in another review said the flour tortillas were store bought...well if that is the case, I want to know where I can buy them because they were literally the best flour tortillas I've had since leaving California back in 05 where you could eat Mexican and watch them make the tortillas in front of you. They tasted home made and were soft and freaking delicious. With the veggies, meat, some of that fresh pico and some rice and beans, it made for a VERY satisfying bite. The meal ended and a small sweet was brought out (just right) and the very friendly head of house took my payment. The price was reasonable for a fajita dinner. Sol De Mexico is just on the edge of being the best Mexican in Bham. A little more refinement in the food, some small touches here and there, new seat covers, some bigger, fresher chips, some better salsa and perhaps a bit better cut of meat on the fajitas and a side of cheese and they would achieve Fajita Greatness. I'd gladly pay a few more $$ for these refinements and if made, I suspect the place would be full instead of empty. The wait staff is very friendly and as I was leaving another gentleman came in who was obviously a regular and they greeted him like family. I like places like this where they know you by name. We thought the place was closed initially when we pulled in, however we were running on 'toddler time' which means we were looking for dinner around 4:45pm lol so that could have been it. We walked inside and the decor was bright and cheery. Lilia was our hostess and server and we could not have received a more warm welcome. We weren't sure what we were in for since we are originally from Los Angeles where we frequent a lot of Mexican restaurants and are visiting Bellingham for a couple of months. The food was delicious--the chips were delicious, salsa was nice and spicy and holy wow the plates were HOT! My husband ordered the chicken mole which came with beans, rice and yummy tortillas, my toddler had the kids burrito with beans and rice (which to me was a full sized entree so we had great leftovers) and I had the cheese enchiladas which also came with beans and rice. Lilia was so kind, welcoming us to the neighborhood (she mentioned she had originally lived in La Puente, CA for a bit) and giving us advice to check out a nearby park for our son and even gave us a sweet treat at the end of our meal. The table across from us seemed to be regulars which was great to see and the restaurant began to pick up as it got closer to the dinner rush. Well stopped in here before the big concert last night as it's really close to civic field and wow was it not good! The staff was friendly but the drinks and food were not good at all...I ordered the mai tai from there menu it came out yellow like a mimosa I took a sip and it was awful I returned it and then asked for a Cadillac margarita instead that was just as awful...my husband got a rum and coke it was flat soda...then we ate the chef pizza it was meh honestly I got turned off after the drinks I thought I was going to get food poisoning...there are way more amazing Mexican restaurants in town to choose. read more

Probably some of the worst food I've ever had. Went there last night with my husband before a concert. I ordered a taco salad and my husband ordered carne asada. My taco salad had a super soggy shell and was covered in sour cream. It was basically inedible. The chicken was also chewy and not flavorful. My husband's steak with his carne asada was chewy and gross. And he ordered corn tortillas but was brought flour. He didn't notice until the waiter had walked away and disappeared in the back. It was gross and we were super unsatisfied. After the concert we saw a bunch of people going in and almost stopped them and told them to avoid it. I ate everything so it can't be too bad. And here's a cooking tip: can't make those fluffy omelet-type covering for your chili relleno? No problem!! Just thin out and season 2 scrambled eggs with salt, pepper, cumin, chili powder; pour it into a smallish fry pan, lay a poblano stuffed with mild yellow cheese in the middle of the eggs, fold eggs over, serve HOT with a little enchilada sauce poured over all... Definitely edible. Inspired? No. The Guacamole had more tomato (maybe really mild red pepper) than an avocado and that was disappointing. read more

Eh... we came here based on a recommendation from friends... with no taste in Mexican food. We ordered sopitos, carne asadas, and arroz con pollo, items that should be made really well from a family Mexican restaurant. Sopitos were pretty good but sort of bland. I've definitely had better from taco trucks. Usually they come with beans, meat, lettuce, cheese, and sour cream but this one was just meat and lettuce. The carne asada was so thin it felt like eating dried jerky, salty dried jerky. It didn't feel like steak at all. The carne asada was no thicker than maybe five sheets of paper together and it was cooked so dryly. The arroz con pollo was probably the best out of the three, however the texture of the rice was unpleasant. It was over cooked and clumped together because of sogginess. It felt like there was very little chicken so it was kind of disappointing over all. The reason why I'm giving it two stars was because the service was great and they gave us a free small dessert at the end. So my roommates and I live super close to Sol de Mexico and we always drive by wondering if it's any good. Finally, we decided to go and eat there because "we might be sitting on a gold mine". Two of my roommates' birthdays were in the same week, so we decided to go as a birthday dinner. Walking in, I noticed the inside of the restaurant looked so much nicer and cleaned than the outside. There are paintings and murals all over the walls. The lady greeted us right away and took us to our tables. The restaurant can seat a lot of people, but not many people were there. Our servers were super nice and kind. The service was absolutely wonderful. At the end of our meal, they brought desert for everyone and even gave an extra for the birthday boys. The food was freaking delicious too. I'm always craving Mexican food, so I've been to countless Mexican restaurants, and there is a few that can beat this place. Amazing food and a nice, attentive service means I can't give any less than a 5 star. We were right: we were sitting on a gold mine. read more

I definitely took off one star for the sole purpose that they used a syrupy mix in their pina colada. I wanted a pina colada made from proper coconut milk and pineapple juice and ice. :( Their service was excellent. That's why I give them 3 stars and not 2. They were pretty attentive and friendly and courteous. You can tell they really appreciated our business. The only thing is that at the end he didn't ask if we wanted anything else, he just gave us our bill. We might have wanted more? But I completely forgive them for that because with the bill they gave us each a small dessert: sopapilla with strawberry icecream, cinnamon, whip cream. I know I have eaten here before and got some pretty decent food. Not the best, but it was ok. Service was pretty bad my second time coming here. They messed up my order and the server tried to play it off saying that it was for another table. Not sure how that explains that our group was the most recent customers and everyone else in the restaurant was already eating. I have eaten Mexican food all up and down the west coast and have had a variety of dishes and consider myself a bit of a food snob so finding a wonderful place to eat is an exciting experience ( there are so many crappy restaurants everywhere). We wanted a margarita and decided to go to Sol De Mexico since it was in the neighborhood. We were the only people in the entire restaurant. We ordered Cadillac margaritas which should be an upgrade from the usual sweet and sour style margarita mix to fresh lime juice and top shelf orange liquor. We watched the bartender measure out the tequila and then top it off with mix from a very old and dirty 5 gallon cambro with a spigot. We took a drink and we had no idea quite how to describe what the flavor was. It tasted like the plastic had leeched into the mix but it was worse than that. Maybe the container had never been washed and just topped off for years? We mentioned to the bartender that our margaritas tasted really off and that something was wrong and she told us that she had never had a single complaint in 23 years and proceeded to charge us full price. We paid Cadillac margarita prices for bottom shelf mystery chemical undrinkable swill and left our full drinks on the table. I have no idea how this place can be in business but I am glad I didn't drink that because I have no idea what chemicals were making that flavor. read more

It's unlikely that I will ever again eat here. After receiving a glass for his beer, my companion discovered that the glass wasn't clean. Built up grime around the rim from not being properly washed for some time. Strike 1. After receiving our salsa, we realized that the bowl wasn't properly cleaned. There was a green glaze on the inside that smelled like mildew. Strike 2. The bathroom was also quite disgusting. Strike 3. The first two reasons are enough not to revisit this restaurant. This is just not good food. I went here on a Sunday night and found that it was cold empty and uncomfortable. I had a carne asada that was razor thin and devoid of all flavor. Another person with me had a chicken burrito that was small and underwhelming. We enjoy their Mexican food, we've ate here a handful of times and never been disappointed. They serve very generous portions, even the kid meals. Margaritas are yummy. The cabbage pico they serve with the free tortilla chips is delicious. I ordered a shrimp dish (Camarones Rancheros I believe?) that on the menu showed avocado slices on the plate although I didn't receive any, so I asked for a side of guac and sour cream. The Food? .....Okay maybe I have been spoiled by Mi Mexico, so I tried to keep an open mind. But I have to say it was awful. The chips were stale and cold, not impressed. My food was not good. I had a chicken bone and a hair in my rice so there's that. The Decor? I wish some of you would stop saying "It's so bright and vivid, ahhhh". It's not. When they say "Family owned" they are very right. It's probably been handed down because no one wants to upgrade anything including the outdated colors/bathroom appliances. Speaking of bathroom.... Upon entering the bathroom I noticed in both stalls that there was no toilet paper. Why?! I understand you're slow, but come on! My "favorite" part? You'll love this.. As I came back to our booth I noticed how clean the brick walls were. THAT'S BECAUSE THEY'RE FOAM. Foam. Brick. Walls. What!? It just amp up the tackiness level for me. I've visited Sol De Mexico a handful of times. It's a small, family owned restaurant and is great for a quick Mexican lunch or dinner. They consistently serve decent food and their service is almost always extremely friendly and polite. They also give you a complimentary sopapilla (fried tortilla with cinnamon, sugar and whipped cream) after your meal. Not the best Mexican food I've ever eaten, but I rate 4 stars for the experience and friendly service. read more

When you live in Canada and every Mexican restaurant charges $15 for a simple dish, finding a place like this is like finding a hidden gem. We stumbled into this place while driving around looking for a Tex Mex place! Lucky us. For half the price for what you get at home i thought was quality tex mex dishes with all the toppings (salsa, sour cream, and salsa) for free(Canadian like to charge for these a lot of the time)!
