A great culinary experience for contemporary Italian fare. A hands on chef owner. First time for horse tartar. A clean neutral meat which ate like beef otherwise. The crema added the necessary fat to round off the palate. The squab with herbs and strawberry vinaigrette was amazing. He layered all the ingredients intentionally to impact the taste. Finished with a pear semifreddo with rum mascarpone and chocolate meringue. An exciting meal with a talented chef.
A minimalist modern space with an open kitchen. I think it can seat twenty people max so consider reservations for dinner.
Some minor critiques. The tortilla did not work for the tartar as it was pre-made. I had it with the house bread and it was fine. The pear semifreddo did not have a fruit taste but otherwise an elegant dessert. I will definitely return if I am ever in Parma again. read more
