I have to be VERY careful on where I get sushi because of my seafood (primarily shellfish) allergy. Tonight, going out into the downpour I decided to try Fresh Sushi Cafe - and I was not disappointed! I told the owner of my allergy and he took great care in using the proper equipment to make my food. I got 2 avocado rolls and an order of chicken dumplings. The owner was cheerful, attentive, and talkative, so we talked shop (I'm a now-retired chef) while he carefully prepared my food. I'll have to say, I more than got my money's worth! Normally, a 'roll' has 8 pieces. These were cut into 16 (that 2 rolls per 1 order!!) and cut precisely into 2-bite sizes. Each order was placed into individual boxes with generous portions of pickled cabbage and wasabi. The rice was at the perfect temperature for precise rolling. The avocado was fresh tasting and soft but not too soft. The chicken dumplings were perfectly fried and sided with spicy mayo and hoisin sauce. I ate all of the dumplings and 1 box of the sushi; the rest will be for lunch tomorrow! It's a new business and - in part to the landlord not doing its job in the beginning - it's not YET a sit-down establishment. It's all take-out until the gas lines are installed then the owner will roll out his intended menu. Yes, it looks a little rough when you look around, but it's clean and well organized. The menu "board" is easy to read. Although it's not as elaborate as other sushi establishments, it's got what you like. While you wait for your order, there's a gratis coffee bar. As I said, this place is going to be THE sushi connection for the area. For now, it's going to be at least a weekly stop for me!
