Loved everything about them. Easy to set up and specify what we needed and communicate with management. At the event, the servers and bartenders arrived on time and were VERY helpful and hardworking. They went above and beyond and took initiative. I had never worked with caterers before, and i was amazed at how much they actually did for the party. Smoke and Spice catered our son's rehearsal luncheon on March 23rd, and the food was absolutely delicious. Everyone raved about the food. We ordered the jalapeno meatballs (wow!), pulled pork, smoked bbq chicken, mild chipotle potato salad (OMG!!!), baked beans, mac 'n cheese, and cornbread, and it was ALL delicious. At the firm they get this delicious BBQ catered food from smoke and spice. I have never been to the actual restaurant but if I am ever in the area I would! I have had a variety of all their menu items and I have no complaints! Everything is tasty and very filling. The BBQ ribs are tender and taste good. The bread is moist not dry. The brisket is juicy with a nice smoky flavor and crisp outer layer Mashed potatoes are full of flavor and have a similarity to the taste of the ones from Cheesecake Factory. Smoke and Spice did an AMAZING job for our Beach BBQ at Virginia Key Beach back in March. They were on time, the staff was extremely friendly and every step of the process was nothing but swift. Let's start with the brisket that's smoked for over 20 hours to perfection, with juicy tenderness that features the natural flavor of the beef and had smoke & seasoning as accents. A good brisket should have a slight pull to it yet still be firm tender. Mark's brisket passes both the flavor and the texture tests! Moving onto the ribs, Mark uses a sweet yet slightly tangy flavor profile and cooks the ribs to perfection. Ribs should NOT be fall-off-the-bone, yet they should be tender enough to take a nice bite out of without tugging. This middle ground is tough to achieve, and Mark NAILS IT! Again, the natural flavor of the pork is center stage, with supporting cast of smoke and unique flavor comments. BBQ pulled chicken? This is one of the most underused meats in great BBQ, and Mark shows why it's one of his best kept secrets. The chicken was tender, juicy, and packed with flavors that made me want an endless plate of the stuff! Lastly, his pulled pork was simple and delightful. Too many chefs overwhelm pork with flavors that bury the natural goodness of the meat. Not Mark-- there's just enough Smoke & Spice to bring out the best of the natural flavor!
