Call me a snob, but none of the silverware matched, either. Now, I can overlook all of the above when the food is amazing. But it wasn't. Some of it was awesome and some was blah. The hush puppies were excellent! Made fresh. Not the machine made round balls you can get anywhere. The flavor and the remoulade sauce were perfect. I got a container of Ken's blue cheese with my salad. That was very disappointing. I expected house-made dressing as the menu stated. The seafood was definitely fresh and the serving size was good. My friend's grouper look great and he said it was good. But something was lacking in presentation. Big, fluffy and fell apart perfectly but looked a little sad on the giant plate. No parsley or greenery. Too much yellow. Yellow rice and veggies were mostly red & yellow peppers. The garlic bread was dry and had little to no garlic. Now I'll get to my disappointing dinner. One of my favorite meals is shrimp and grits. Definitely not my favorite version. The blackened shrimp were fresh, a good size and plentiful. Served on a pile of plain grits sprinkled with cheese and scallions. No roux, no sauce, no butter, no seasoning, no nothing. Whoever put this recipe together has never had Southern shrimp & grits nor had they ever Googled a recipe for shrimp and grits. It was the saddest meal ever. Keep in mind, this is the only time I've ever been to this restaurant. However, my impression is the owners love seafood and have been supplying seafood to this community for ages. And seafood is at the top of my list of things I could eat for the rest of my life. However, I feel that they have no cooking background whatsoever. Cooking, seasoning, and presentation all felt lacking. But as advertised the seafood was amazingly fresh and they definitely get kudos for that. I will probably give them another chance as this was my first visit and this is their second restaurant, so there must be some kind of redeeming factor. Maybe next time.

Food wise, it was decent! The crab fries felt like a nicely stewed poutine with good seasoning, the coconut shrimp with the spicy sauce had a kick...and the Trio Seafood Pasta? Well...It felt really bland compared to the appetizers which was surprising and disappointing. One thing I would like to give them credit on is their respect for people with allergies. When they learned someone in my party had a seafood allergy? I had a Buffalo Trace Manhattan, she had an Angry Orchard, and my small glass came with enough ice to keep it in the freezer for the next shift. I had the blackened shrimp tacos. Tasty, with a little tang, but this is where the pricing starts to raise an eyebrow. They were $17 for 2, and most other places give you 3 for $16 or less, usually with sides too. She had the steak quesadilla at $18, which also felt a little steep. Most others are $14 or less. Still, she enjoyed it, so there's that. For once, there was no 3% credit card upcharge, but at these prices, you have to figure it's already built in somewhere. The food was good overall, though I think the meal came in about $10 high. I also hear the place is for sale. Good food, service, ambiance, and view. All pretty common on the Gulf of America -- which is kind of the point, I guess. They've got a few easy, not-too-expensive fixes, so I'll leave it to you to be the judge.

So, no substitutions. The menu says so, the server will remind you, and honestly? It's a chef driven menu. Interesting background, too: Chef/owner James Renew spent 28 years training with chefs across Florida, Las Vegas, and Sydney before opening Estuary. Apparently, they've been voted among the best restaurants in the Tampa area two consecutive years running. It shows. We started with the crab beignets -- crispy, golden, and paired with a jalapeño aioli that managed to be interesting without setting your face on fire. Nicely done, though I wouldn't have minded a little more kick. The steak frites were the star of the show. The steak was cooked absolutely perfectly. The fries? Cooked in duck fat. DUCK FAT. Honestly, tasted like fries to me -- and a little underdone at that. Our waiter was friendly, knowledgeable, and clearly proud of the place -- rightfully so. The Buffalo Trace Manhattan on the rocks was dangerously good. Drinks all around were solid. Total came to just over $100 for two before tip -- fair for this quality. Fair warning though -- they tack on a 3% credit card surcharge. Unnecessary and a little annoying at this price point. Nice higher end restaurant in the new downtown. Reasonable prices without being pretentious. We'll be back.
