They proudly serve up bison and Ossabaw Island pork raised right on their own farm--supporting local ag and bringing the best of our region straight to your taste buds. Their tagline is "It's not a burger unless it's BISON," and when they rolled up just five minutes from my house, I figured it was fate. First time eating bison? Holiday weekend kickoff? Yes, please.
The menu is shockingly stacked for a little food truck--bison burgers, pulled pork and bison sandwiches, bison-loaded mac & cheese, and fries upon fries (fresh-cut, Old Bay, steak dust, or fully loaded). Honestly, if I were planning a festival, wedding, or backyard rager, I'd book this truck in a heartbeat.
I went all in on the August Burger of the Month: The Bourbon Burger. Picture this: a toasted brioche bun hugging a juicy bison burger, blueberry maple BBQ sauce, bourbon candied bacon, melted gouda, and crispy onions stacked sky-high. It looked like heaven in a to-go box, smelled like a dream, and delivered big time--sweet, smoky, savory perfection. The burger had those crispy edges on the outside, juicy bliss on the inside. First-time bison eater here and... I'm officially a fan. It's a little sweeter than beef, zero gaminess, and paired with that blueberry BBQ sauce + gouda combo, it basically made my heart skip a beat while my taste buds (and let's be honest, my whole body) broke into a happy dance.
On the side: a heaping pile of Old Bay fresh-cut fries. I polished off maybe a third before admitting defeat, but don't worry--they reheated like a dream in the air fryer for late-night snackies. And the price point? $13 for the Bourbon Burger, $8 for the mountain of fries--totally fair for how ridiculously happy my mouth was.
Bottom line: Find this truck. Stuff your face with bison. Do not pass go. Do not wait. This is NOT your average burger, and I'll 100% be back to keep eating my way through their menu of bison greatness.
