Maybe in the future they can relocate to a shop with a better set up? Our cheese monger in Houston had several lanes to split up the "I'm here to taste cheeses" folk from the "I'm here to order a meal". We had crab cakes that are the best in ABQ so far and chowder soup. For entrees, we had the jumbo scallops and Henry IV filet mignon wrapped in bacon with artichoke hearts.
